Teeling is a young brand of Irish whiskey that has experienced a rebirth. The new facility is built next to a historic distillery founded in the 500th century. The distillery produces single malt, grain and blended whiskeys of premium class according to traditional recipes, the capacity of production lines is XNUMX liters per year.

Historical information

The Teeling factory was founded in 1782 in the Irish city of Dublin by the distant ancestor of the modern owners, Walter Tilling. The company was located in the Liberty area – a major center for the production of strong drinks for the whole of Europe. At the beginning of the XNUMXth century, Irish companies faced a sharp drop in demand for whiskey, so the company ceased to exist.

In 1985, a descendant of the original owner, John Tilling, purchased the distillery on the Irish peninsula of Cooley. The businessman launched the production of traditional Irish whiskey under the once famous, but already forgotten brands. Drinks were made by triple distillation from pale malt. The products were successful, and the big companies Jim Beam and Maker’s Mark wanted to buy the plant. Tilling sold the company, and with the proceeds he decided to revive the family company.

Teeling Distillery was registered in 2011, and four years later the first batch of whiskey rolled off the assembly line of the new factory. The phoenix became the symbol of the company, which symbolized the revival of the brand. Under the terms of an agreement with Jim Beam to sell the old enterprise, Tilling received 16 barrels of aged whiskey, which is added to blends. Teeling is a family company, John’s sons, Jack and Stephen, run the business together with their father.

Production features

The production uses both malted and pure barley varieties, which are stored in huge bins at the rear of the plant. A batch of raw materials weighing four tons enters the workshops through a pipeline system. Fermentation takes place in wooden and stainless steel tanks with a capacity of 15 to 30 thousand liters.

Distillation lasts in three stages, the output is alcohol with a strength of 82%. Real Irish whiskey must be aged for at least three years. The drink is poured into barrels of sherry, Madeira, port, rum and California wine. Since the enterprise is young, a number of varieties continue to ripen in the cellars.

Interesting Facts

At the enterprise, a rare strain of yeast brought from South Africa is added to the wort. Microorganisms process sugars into esters, as a result, the distillate acquires density, natural sweetness and fruity taste.

The distillation takes place in three copper stills, each of which produces spirits of higher purity and strength. Alambiks are called by their first names – Rebecca, Natalie and Alison, as evidenced by the plates attached to the outside of the equipment.

The flagship brand of classic blended Irish whiskey is matured in rum barrels, which gives the drink its characteristic aroma. In the sweet taste, woody notes with hints of spices are felt. Voted Best Blended Whiskey at the 2018 Irish Whiskey Awards.

The deep amber-colored drink is aged in barrels where California wine was previously stored. In a bright fruity aroma, the smells of spices stand out. The taste is complex – at the start there are shades of hot spices that turn into grape notes. Wood, cinnamon, cloves and vanilla are felt in the aftertaste. Grain Whiskey is a multiple winner of the World Whiskeys Awards.

Teeling, Irish Whiskey Single Malt, 46%

Made from 1991% malt with the addition of XNUMX bottled aged whiskey. For exposure, a combination of five types of barrels is used. The aroma combines lime, melon and fig. The taste is smooth and balanced, with dried fruits, citrus fruits, vanilla and cloves.

Teeling Dublin Pot Still, 46%

It is positioned as a real Dublin whiskey. Created from equal proportions of malted and plain barley, aged in bourbon and wine barrels. The aroma is floral, with a slight touch of honey and citrus. The flavor range combines shades of grapes, sweet peppers, ripe peaches and shortbread cookies.
