Technology for making homemade viburnum liqueur

An easy-to-prepare delicious alcoholic drink that strengthens the immune system. With enough berries, be sure to make homemade viburnum liqueur. On cold winter evenings, this is an indispensable thing. We will consider a proven recipe and technology further.

Kalina for liquor is best harvested after the first frost, when the fruits become sweetish. Very small and spoiled berries are not suitable, as they noticeably worsen the quality of the drink.

Instead of vodka, you can use alcohol diluted to 40-45 degrees, well-purified moonshine or cognac. An interesting option is obtained if you replace sugar with honey. The proportions and cooking technology do not change.

Ingredients:

  • viburnum berries – 2 kg;
  • vodka (alcohol, moonshine) – 1 liter;
  • sugar – 1,5 kg;
  • water – 0,5 liters.

1. Separate viburnum berries from twigs and pour boiling water over them. After 20-30 minutes, drain the water. Soaking in boiling water removes some of the tannins. As a result, the finished viburnum liqueur does not give off bitterness.

2. Pour the berries into a jar, add 0,5 kg of sugar and mix well.

3. Close the jar tightly with a lid and put it in a warm sunny place for 3 days.

4. Add vodka. Vodka should cover the layer of berries by at least 1-2 cm. Close the lid again and keep for 10 days in a sunny place.

5. Mix 1 kg of sugar and 0,5 liters of water in a saucepan. Bring to a boil, simmer for 5 minutes, stirring and skimming the white foam from the surface. Cool syrup to room temperature.

6. Mix viburnum infusion and sugar syrup. Infuse the resulting mixture for 30-40 days in a dark, warm (16-30°C) place, shaking every 2-3 days.

7. Filter the finished viburnum liquor through gauze and a layer of cotton wool. Pour into bottles for storage and close tightly with corks.

In a dark, cool place, the drink can be stored for up to 3 years. Fortress liquor 22-25 degrees.
