Technology for making cherry vodka (liquor)

After insisting on ripe berries, ordinary vodka turns into a drink with an excellent mild taste and pleasant aroma. We will look at a simple recipe for cherry vodka, suitable for cooking at home. Of the ingredients, you only need cherries (cherries), vodka, sugar and water.

Classic cherry vodka (Kirschwasser – from the German “Kirschwasser” translates as “cherry water”) is an alcoholic drink with a strength of 38-43%, produced by distilling mash from a special variety of black cherries. Kirsch (abbreviated name) is popular in Germany, France and Switzerland. In other words, to prepare classic vodka from cherries, you need to make mash from berries, and after the end of fermentation, overtake on a moonshine still. If you want to taste the real Kirschwasser, it is better to buy a drink than to make it yourself, since there are no necessary varieties in our area.

In Russia, cherry vodka is not understood as Kirschwasser, but as ordinary cherry liqueur. We will not deviate from national traditions and will prepare one of the liqueur options.

Ingredients:

  • cherries (cherries) – 600 grams;
  • vodka – 0,5 liters;
  • water – 200 ml;
  • sugar – 300 grams.

1. Wash cherries, make shallow cuts in each. Berries should not fall apart. Due to the seeds, a characteristic almond flavor is formed.

2. Place the berries in a saucepan, add sugar and water.

3. Bring the mixture to a boil over low heat and continue to cook, stirring with a spoon, until the sugar is completely dissolved, this usually takes up to 5 minutes.

4. Remove the cherry syrup from the heat, cool to room temperature, then pour into a glass container.

5. Add vodka, mix.

6. Close the bottle tightly and leave to infuse in a dark place at room temperature for 4 weeks. Shake every 4-5 days. Thanks to a long exposure, cherry vodka acquires a rich taste.

7. Strain the drink through cheesecloth, squeeze the berries slightly (no longer needed). Pour the liquor into bottles for storage, seal tightly.

If sediment appears at the bottom or turbidity, filter through cotton wool (optional).

Serve chilled cherry vodka in a small carafe. Store in refrigerator or basement. Shelf life – up to 3 years. Fortress – 16-18 degrees.
