Tea drinking in Russian

In England, tea time is a ceremony imbued with the spirit of a long tradition. It is at this time that the largest number of visitors gather in our London restaurant to drink a cup of tea with a sandwich or some sweet pastry. And why today I want to talk about my culinary fantasies on the topic of tea drinking in Russian?

And why today I want to talk about my culinary fantasies on the topic of tea drinking in Russian?

“I LOVE TO SERVE THESE CREPES WITH STRONG BLACK TEA”

Because a year ago I got acquainted with Russia, where another, now world-famous tradition of drinking tea from a samovar comes from – strong, fragrant, well-infused. I know that many Muscovites like tea with some flavor – berries, spices or citrus. Although I personally prefer the slightly iodine flavor of Japanese green tea varieties – I drink it not at all strong and without any additives … As an accompaniment, I suggest trying both salty and sweet a la russe: pancakes with smoked salmon and cucumber , as well as pavlova meringue cake with whipped cream. By the way, the authorship of this famous recipe, created almost a century ago in honor of the great Russian ballerina, is still disputed by the confectioners of Australia and New Zealand!”

Smoked salmon appetizer with cucumber

For 6 people

Preparation: 20 minutes

Ingredients

  • 100 mL of creamy cream
  • Juice of half a lemon
  • 20 g fresh grated horseradish
  • 2 cucumber
  • 2 Art. l. olive oil
  • 18 mini pancakes
  • 300 g smoked salmon
  • 1 bunch of chives
  • 1 pomelo wedge (optional)
  • Salt, ground chili pepper

Preparation

Whip the cream in a mixer. When they have risen to three-quarters, add lemon juice, horseradish, salt and pepper. Peel the cucumbers, cut the flesh into small cubes, also lightly salt, pepper and season with olive oil. Top each pancake with a slice of smoked salmon, a scoop of cooked whipped cream, and a few cubes of cucumber. Garnish with springy pomelo pulp and chives.

“Pavlova” with tropical fruits

For 6 people

Preparation: 1 hour

Ingredients

Dlya meringue:

  • 4 egg whites
  • 250 g sugar
  • 1 hours. L. white wine vinegar
  • 25 g of cornmeal
  • 1 tsp. vanilla essence
  • Salt

For the cream:

  • 250 ml cream
  • 60 ml mascarpone cream cheese
  • 25 grams of powdered sugar
  • 1/3 of the contents of the vanilla pod

For decoration:

  • Fresh tropical fruits – mango, papaya, kiwi…

Preparation

Meringue. Preheat oven to 180°C. On baking paper, draw a circle with a diameter of 20 cm. Beat the chilled egg whites with a pinch of salt. When the whites are almost ready, gradually add the powdered sugar. Continue whisking until the mixture is thick enough. Add vinegar, cornmeal and liquid vanilla, mix gently. Using a pastry bag, spread the whipped mixture on the paper so that you get an even, thick disk. Lower the temperature to 120°C and bake the meringue in the closed oven for 1 hour. Remove from the oven, let it cool, then carefully flip over so as not to break, and transfer to a dish.

Cream. Combine cream, mascarpone, sugar and vanilla. Beat in a mixer, very gradually increasing its speed, until a thick mass is obtained. Place the cream in a piping bag, place on top of the meringue and garnish with fresh fruit slices. Keep the dessert in the refrigerator until serving.
