The brand belongs to the most famous in Ukraine House of Vintage Cognacs “Tavria”. Tavria has three lines of drinks – ordinary, vintage and collection. Connoisseurs note their delicate taste with notes of raisins and chocolate and a pleasant long aftertaste with hints of white grapes.
Historical reference. The beginning of the “Tavrian” history was the invitation to Russia of hereditary Swiss winemakers Jean Jeton, Louis Hechler and Julius Mayer. For many years, the idea of transferring the ancient traditions of French winemakers to the Lower Dnieper sands did not leave the Russian Tsar Alexander I. Why exactly there? This is the same geographical latitude with the famous French province of Charente, where the city of Cognac is located and the fortress from which the history of cognac began – Chateau de Cognac. Similar climatic conditions and soils of the ancient channel of the Dnieper, as expected, made it possible to grow cognac grape varieties and create spirits that are not identical, but similar in quality.
At first, the settlers had a hard time: sandstorms and dry east winds covered young seedlings, gluttonous marble beetles exterminated the varietal vine – fighting them and irrigating required huge costs. But in 1889, the Swiss colonists received the first harvest and founded a viticulture and wine-growing farm and the village of Osnova in the Kherson steppe. Today it is already a city – New Kakhovka, which retains the status of the capital of Ukrainian winemaking.
The house of vintage cognacs “Tavria” is the most famous Ukrainian enterprise in the alcohol industry. He owns 1400 hectares of wine-growing lands, stretching to the Askania-Nova reserve. The main advantage of the company experts call the full production cycle – from growing grapes to bottling the drink obtained in accordance with French traditions.
The house of vintage cognacs Tavria has an international certificate of conformity of products to ecological products. He owns 6 cognac brands known outside of Ukraine: Tavria, Georgievsky, Borisfen, ALeXX, Askania and Jatone, named after one of the Swiss colonists-founders Jean Jeton.
Production features
- The grapes are harvested in October and only by hand.
- The entire crop is immediately sent under the press, and sugar is not added to the juice for fermentation.
- 3 weeks after the start of fermentation, dry young wine is distilled using the old Charente method – using alambic, a special distillation apparatus. Double distillation: during the first distillation raw alcohol with a strength of 24-32% is obtained, during the second its strength increases to 69-72%.
- Alcohols mature from 3 to 50 years at a temperature of 15 ° C in oak barrels with a capacity of 270-450 liters.
- Aged spirits are mixed according to recipes that are not disclosed – blends are created, and then the strength of the drink is reduced to 40% with distilled water.
- The slogan of TM “Tavria” – “Becomes more perfect with time”, corresponds to the principle of creating all cognacs: the older they are, the richer the taste and the more refined the aroma.
Types of cognacs “Tavria”
Tavria, VSOP (40%)
A five-year-old ordinary cognac of amber color with golden reflections corresponds to the VSOP (Very Superior Old Pale) class according to the French classification. The taste of the drink is delicate, well-balanced, with hints of milk chocolate and juicy green apple. The aroma is complex, with notes of white grapes, dark chocolate and spices. In 2012, Tavria VSOP received bronze at the International Wine & Spirits Challenge. Recommended by connoisseurs and restaurateurs as a digestif, can be served with coffee or fruit.
Tavria Classic Gold Reserve (40%)
Vintage cognac XO class (Extra Old) with a seven-year exposure smells like dried cherries, raisins, vanilla. Balanced taste with woody notes, hints of green apple, chocolate and white grapes. According to the recommendations of bartenders and restaurant critics, it is served as a digestif.
Tavria, Kherson (42%)
XO (Extra Old) collection cognac with fifteen years of aging: a blend of 15-year-old spirits matures for another three years after mixing. The drink is a deep tea color with reddish highlights and smells pleasantly of flowers, fruits and vanilla. In the multifaceted taste, shades of raisins, prunes, oak wood are felt. Warm aftertaste with a tart aftertaste. Digestif, goes well with coffee.
