January 25 – Day of the Holy Martyr Tatiana, the name day of everyone who bears the name Tatiana and Student’s Day. This day in the old days was also called “the sun”. “The Sun” is the warmest place in the house, turned towards the sun by the mouth of the stove. This is the so-called “woman’s corner”. Today it is the kitchen.
The dawn barely touched the edge of heaven, and the woman, the “big woman,” was the most important in the household, having rinsed her face with icy water, pushed the stove flap aside and began to kindle a fire in the stove.
Since ancient times, on Tatiana’s day, it was customary to bake loaves in the form of the Sun. “Tatyana and the loaf bakes, and the rugs on the river beats, and the round dance leads!”, – they said in the old days.
Bread loaf, kovriga were revered by our ancestors as the sun itself. There was a sign: “When the sun went down, don’t fix the bread loaf. Otherwise, you’ll spend another day. ” How well the old custom fits in well with the modern “Don’t eat in the evening” rule!
An old loaf recipe for Tatyana’s day
Ingredients:
- Milk -2 cups
- Eggs – 10 pcs.
- Oil – 0,5 cups
- Yeast – 1 tablespoon
- Flour – how much dough will take
- Crackers – for shape
Method of preparation:
1. Add ten eggs to two glasses of milk (separating the yolks from the whites) and beat separately.
2. Pour in half a cup of melted butter. If you wish for a richer taste, pour in a whole cup. Put a tablespoon of yeast and enough flour in the mass to knead a thin dough.
3. Put the future loaf in a warm place and let it fit well.
4. Then beat with a wooden spatula for half an hour, saying: “Bread-father, pretend to be nourishing, grow up; as the sun, as the white light on the earth stands firm, the earth is kept, so you will be born in health, for good, for love, for life to all my clan-family.
5. Let the dough rise again. Prepare a mold, grease it with butter, sprinkle with breadcrumbs, put the dough in it and put it in the oven.
How to guess on Tatyana’s loaf
We looked further along the loaf: if the bread rose in a mound in the middle, then wait for good luck, life will go up the hill. If the loaf is smooth, without flaws, the whole year will pass serene.
Oddly enough, they rejoiced at the burnt loaf. “Hot, hot, salty, tasty, cold, sour – there is a table on that.” That is, food should be as varied as life, which is valued for its diversity, for its completeness.
When ready, the baked goods were taken out of the oven, allowed to cool slightly and, warm, the loaf was broken off piece by piece to all family members. According to tradition, everyone had to eat at least a piece of such a loaf so that the Sun would give him a little of its warmth.
And if Tatyana was in the family, then the most burnt crust should certainly be eaten by her – so that she would readily accept everything that fate bestows.
