The spring menu is full of rainbow colors, bright taste combinations and sunny mood. This is largely due to the various salads and snacks with our favorite seasonal vegetables. Arab tabouleh salad is made from bulgur-cereals made from durum wheat. Wheat grains are soaked, steamed and dried (traditionally in the sun), then they are peeled from the shell and crushed. Some housewives prepare tabouleh from couscous. This cereal is native to North Africa and is produced in a special way. The ground wheat grains are moistened, rolled into balls and dried. This is how the couscous “National” is obtained, which is distinguished by selected light yellow grains of a large fraction. Like bulgur, there is no need to cook it either. Fill 200 g of cereals with 400 ml of hot water and leave to swell. Cut 1 zucchini into rings, fry in olive oil. 200 g of shrimps are boiled according to the instructions on the package. Make a dressing of lemon juice, 3 tablespoons of sesame oil, a pinch of salt and black pepper. Mix the couscous with the shrimp and zucchini, season with the sauce and garnish with a sprig of mint.
Sprouts of health and beauty
Many supporters of healthy eating adore salads with sprouted mash (mung beans). Mash “National” is suitable for this recipe. Mash is the most popular legume crop in Asia, also known as”mung beans”. Masha beans are oval in shape, green in color and small in size. They are smooth to the touch, and the shell has a glossy sheen, due to oil polishing. Then we put the beans on a wet cheesecloth and keep them for another day, moistening them from time to time. Now you can prepare a salad. Peel the red sweet pepper from the seeds and partitions, cut into slices. In the same way, we cut half of the cucumber. Spread in a bowl mixed with mash and vegetables. Sprinkle with lemon juice to taste. With this salad, losing weight is much tastier and healthier.
Bowls of Plenty
The menu will successfully fit snacks with cereals. For example, tomatoes stuffed with quinoa. Quinoa “National” is the best choice for such a dish. Quinoa tastes like unprocessed rice, is well suited as a side dish and for cooking porridge. Quinoa contains amino acids and a large amount of plant proteins. Cook until ready 150 g of cereals in salted water, throw it in a colander. Cut off the “lids” from 8 dense tomatoes and carefully remove the core. Chop the red onion, 4-5 stalks of celery and a bunch of coriander. Combine the vegetables with tomato pulp and quinoa, salt and pepper to taste, season with a spoonful of sour cream. Fill the tomato “cups” with filling, add green basil leaves on top.
Rice in green bushes

In the finished form, the rice is crumbly and is perfect for preparing side dishes and independent rice dishes. Cook 150 g of rice in advance. Grate the zucchini, squeeze well, combine with 6 tbsp. l. flour, egg, a pinch of salt, roll out the rice, chopped spinach, dill and parsley and knead the dough. Using a ladle, pour it into a wide frying pan and fry the pancakes. These pancakes will be the decoration of a family dinner.
Balloons from the East
The popular Middle Eastern snack falafel from Turkish peas is also loved by our gourmets. Chickpeas “National” will allow you to enjoy its flavor to the fullest. Golden-yellow peas with a diameter of 10 mm have a soft pleasant taste with unique nutty notes. Soak 300 g of chickpeas in water for 8-10 hours and pass through a meat grinder. Finely chop 3-4 green onion feathers, 5-6 sprigs of parsley and mix in the chickpea mass. Add 1 tbsp lemon juice, a pinch of salt, 1/2 tsp paprika, cumin, coriander and chili. With wet hands, we form balls the size of walnuts. Falafel is usually deep-fried. But we will bake them in the oven at 180°C for 45 minutes, drizzled with olive oil. As a sauce, you can serve sour cream with garlic and chopped herbs.
