And when you get tired of this activity, you can start cooking delicious treats. And since there is no desire to stand at the stove for a long time in the summer, we have selected the simplest recipes for you. Today we are preparing homemade cakes with our favorite berries.

Blueberry delight

Useful properties of blueberries can be listed endlessly. One handful of this berry contains the daily norm of vitamin C. This valuable element is responsible for a strong immune system, smooth skin, elastic blood vessels and the production of vital hormones. There are a great many recipes for baking with blueberries.   • Blueberries-350 g.
  • Flour — 260 g.
  • Butter-125 g.
  • Eggs — 2 pcs.
  • Sugar-200 g for the dough + 2 tbsp. l. for sprinkling.
  • Milk — 100 ml.
  • Baking powder — 1 tsp.
  • Salt-a pinch.
  • Cinnamon – ½ tsp.
  • Vanilla extract — 1 tsp.

Beat the butter at room temperature with a white mixer, gradually adding sugar. Continuing to beat, add the eggs, vanilla extract, cinnamon and salt. Half of the blueberries are kneaded with a fork and mixed into the resulting mass. Then, in several steps, we introduce milk and flour with baking powder. Again, beat everything with a mixer to get a viscous dough. The last to add the remaining whole berries.

We fill the dough molds with oiled paper inserts by about two-thirds. Sprinkle with a mixture of sugar and cinnamon on top and put it in the oven at 180°C for half an hour. Serve blueberry muffins with whipped cream.

Chocolate-covered cherries

Cherries consist of solid advantages. One of them is a beneficial effect on the nervous system. In particular, this berry helps to reason with disturbed nerves and forget about insomnia.   • Cherry — 500 g.
  • Flour-230 g.
  • Milk — 350 ml.

First, you need to thoroughly wash the cherries, carefully remove the seeds and dry them. We will leave a small portion for decoration. Beat the eggs with sugar with a mixer into a light, thick mass. Without stopping, we gradually pour in the milk. In small portions, sift the flour with cocoa and baking powder, knead the thin dough.

Lubricate the baking dish with butter, sprinkle with sugar, spread the berries evenly and pour the dough. Bake the pie at 180°C in the oven for 35-40 minutes. Cool the clafouti, sprinkle with powdered sugar, decorate with whole berries.

Strawberry Rubies

Strawberry is a powerful natural antioxidant that protects healthy cells from destructive free radicals. Thus, it slows down aging at the cellular level.   • Butter — 120 g.

  • Cottage cheese — 300 g.
  • Sour cream — 200 g.
  • Sugar — 150 g.
  • Gelatin — 25 g.
  • Water — 100 ml.


  • Strawberries — 400 g.
  • Strawberry jelly — 1 package.
  • Water — 250 ml.

We grind the cookies in a blender or meat grinder. Mix with softened butter, milk and sugar, knead the dough. We tamp it into a round shape with corrugated sides and put it in the refrigerator.

While the base hardens, beat the cottage cheese, sour cream and sugar. We dissolve gelatin in warm water, introduce it into the curd filling, knead a smooth cream. We put it in a frozen sand base, level it and put it in the freezer for 10 minutes.

Peeled and washed strawberries are cut into beautiful slices. We dilute strawberry jelly in hot water, pour out fresh berries, pour over the frozen curd layer. Now you need to rest the cheesecake in the refrigerator for at least 3 hours. After that, you can take it out of the mold and cut it into portions.

Cherry with a French accent

Cherry is a rich storehouse of valuable substances. These include ellagic acid, which prevents cell mutation and, as a result, the development of cancer diseases. Carefully roll the roll out of the dough, pinch it tightly at the end, bend the edges with a crescent up. We form the rest of the croissants in the same way, lubricate them with a mixture of yolk and milk, put them on a baking sheet and put them in the oven at 200°C for 15-20 minutes.

Raspberries under a crispy crust

Among the many recipes for baking with raspberries, we decided to choose crumble. This is a simple pie, in which a lot of juicy filling is hidden under a thin layer of crumbly crumbs.


  • Flour-130 g.
  • Sugar — 5 tbsp. l.
  • Oat flakes — 3 tbsp. l.
  • Walnuts — 50 g.
  • Butter — 100 g.
  • Vanillin-on the tip of the knife.
  • Salt-a pinch.


  • Raspberries-450 g.
  • Sugar-to taste.
  • Starch — 1 tbsp. l.

Rub the softened butter with flour, vanilla, sugar and salt. Pour out the oat flakes and walnuts slightly crushed with a rolling pin. Knead the crumbs until a homogeneous, loose consistency.

Raspberries are sprinkled with sugar and starch, leave for 10 minutes so that it lets the juice. We put the berry filling in ceramic molds, cover it with butter crumbs on top, put it in the oven at 180°C for 20-25 minutes. Raspberry crumble is especially good when it cools down completely.

Currant tenderness

Red currant is a gift for the digestive system. It helps to digest the proteins coming from food, improves the functioning of the stomach and intestines. In addition, this berry balances the fluid balance in the body and removes harmful substances. Whatever recipe for baking with red currants you choose, your family will be satisfied. This time we will please them with a currant pie with meringue.


  • Red currant — 300 g.
  • Flour — 200 g.
  • Butter — 120 g.
  • Sugar — 50 g in the dough + 100 g in the filling.
  • Egg — 2 pcs.
  • Corn starch — 2 tsp.
  • Baking powder — 1 tsp.
  • Lemon zest — 1 tsp.
  • Salt-a pinch.

Frozen butter is crushed on a grater and rubbed with flour. In turn, add the egg yolks, sugar and lemon zest. Quickly knead the dough so that the butter does not have time to melt, and put it in the refrigerator. After half an hour, we take it out, tamp it into a baking dish, put it in the oven at 200°C for 10 minutes.

Meanwhile, whisk the remaining proteins with sugar and starch into lush strong peaks. The berries need to be prepared in advance-carefully cut off from the twigs, rinse and dry. We spread the red currants in the baked base, cover the top with a layer of lush meringue, return to the oven and stand for another 10 minutes.   • Sugar — 200 g.
  • Eggs — 2 pcs.
  • Baking powder — 1 tsp.
  • Ground crackers — for sprinkling.
  • Powdered sugar and mint — for serving.

Beat the eggs with sugar, gradually add the melted butter and cottage cheese. In the resulting mass, sift the flour with baking powder and knead the soft dough.

We lubricate the cake pan with butter, sprinkle with ground breadcrumbs, tamp half of the dough with an even layer. Spread gooseberries and black currants evenly on top, cover with the second half of the dough. Bake the cake for 40-45 minutes in the oven at 180°C.
