Bell peppers are a common ingredient in fortified salads, especially in summer when market stalls are full of a variety of fresh vegetables. It is enough to mix appetizing red, yellow and green rings of this valuable vegetable with tomatoes and cucumbers, and a light and elegant dish is ready. Sweet peppers can become a staple product of a festive meal, if you show a little imagination and supplement the usual recipe with original additives.
Salad recipe with baked pepper and feta cheese
A dish of baked sweet peppers and spicy-salted sheep’s cheese can be served to the table not only as an amazing snack, but also as a light healthy breakfast or dinner. To make a salad using this simple recipe, prepare the following set of products:
– olive oil or cold-pressed sunflower oil (0,5 cups); – feta cheese (50 g); – Bulgarian pepper (3 pods of different colors); – tomatoes (2-3 pcs.); – large cucumber; – onion, preferably purple (1 head); – vinegar 6% (1 tablespoon); – a couple of basil sprigs and other herbs if desired; – table salt to taste.
Rinse and dry the bell peppers, then place them whole on a baking sheet lined with parchment paper. Bake the vegetables in the hot oven until the skins are charred (this will take about 5 minutes). The optimum oven temperature is 200 ° C. Dip the finished pods in cold and very salty water and let them cool. After that, you can easily peel the skin, and at the same time remove the stalks, take out the core with seeds and cut the pepper into thin half rings.
Before baking sweet bell peppers in the oven, you can remove the skin from it in advance. To do this, boil the vegetable with boiling water, seal it with cling film and hold for 3-5 minutes. After that, it can be easily cleaned.
Combine the sweet vegetable with the other ingredients: chopped cucumbers, tomatoes, onions and coarsely torn basil leaves. Place in a salad bowl or simply in a deep dish. Top with grated or finely diced feta cheese and season the salad with a mixture of vinegar and vegetable oil.
Sweet salad with peppers, rice and tomatoes
Juicy and tender pepper pods in combination with granulated sugar acquire additional flavoring nuances. Add rice to sweetened vegetables for a healthy and nutritious side dish for your meal.
To make a sweet salad, you will need:
– a pod of bell pepper of different colors; – tomatoes (2-3 pcs.); – a small pickled cucumber; – onions (1 head); – boiled long-grain rice (0,5 cups); – a bunch of any greens; – granulated sugar , salt, pepper and 9% vinegar to taste.
The cereals should be boiled in advance in a large amount of water and rinsed well with cold boiled water. Finely chop the vegetables and herbs, then mix them with the rice. For salad dressing, use a mixture of vinegar, sugar, and spices to your liking. When the dish has stood for 10-15 minutes in a cool place, the vegetables will give juices and they will make the salad especially tender and juicy.
