A spicy sweet and sour sauce will help to give fresh dishes a new unusual taste. It is made on the basis of fruits and vegetables, both fresh and canned. This sauce can be prepared for future use and stored in the refrigerator – it will be an excellent substitute for industrial brands.
Sweet and sour sauces are indispensable in Far Eastern cuisine. If you want to add a Chinese flavor to your rice or noodles, simply add a spoonful of spicy sauce to the dish. Homemade mixes are complex and rich in flavor and can be made in just 5 minutes.

You will need: – 1 pod of sweet red pepper; – 1 tablespoon of caraway oil; – 1 clove of garlic; – 5 tablespoons of ready-made chicken broth; – 2 tablespoons of sweet sherry; – a piece of fresh ginger; – salt; – ground black pepper.
Most of the ingredients you need for the sauce can be found at your regular supermarket, and for rare ingredients like caraway oil or oyster sauce, go to specialty stores.
Peel the bell peppers from partitions and seeds, cut into thin slices. Grate the ginger, crush the garlic clove in a mortar. Toast the cumin seeds in a dry skillet until light brown. Place the caraway seeds, add the caraway seed oil to the pan and fry the chopped garlic in it. Add pepper to the garlic and cook together for 1-2 minutes.
Pour sherry, chicken broth into the pan, add grated ginger. While stirring, cook the sauce for 1-2 minutes, then season with salt and pepper. Add the toasted caraway seeds and pour the mixture into the gravy boat. If you want to enhance the sour taste, add a teaspoon of lemon juice to the sauce.
Sweet and sour Chinese sauce based on pineapple juice is suitable for fish or meat dishes; it will give food a light oriental flavor.
You will need: – 150 ml of pineapple juice; – 2 tablespoons of canned pineapple chunks; – 2 tablespoons of cornstarch; – 4 tablespoons of soy sauce; – 1 tablespoon of sugar; – 1 tablespoon of vinegar; – salt; – freshly ground black pepper.
In a saucepan, combine 1 tablespoon of soy sauce and cornstarch. Add chopped pineapple, pineapple juice, sugar, vinegar, salt and pepper, and add remaining soy sauce. Bring the mixture to a boil, simmer for 1 minute, remove from the stove and refrigerate.
This sauce is usually served with chicken or pork dishes.
You will need: – 2 tablespoons of red plum sauce; – 1 tablespoon of peeled almonds; – 1 teaspoon of Chinese red hot pepper sauce; – 50 ml of chicken broth; – 1 onion; – 1 tablespoon of vegetable oil.
Heat vegetable oil in a skillet and fry the almonds in it until light brown. Add chicken stock, Chinese sauce, red plum sauce and finely chopped onion. Stir the mixture and simmer for about 2 minutes.
