Sweden creates milk for vegetarians
 

Swedish scientist Eva Thornberg of Lund University has created milk that may seriously interest vegans. The fact is that this milk is made from potatoes.

The principle of preparation of this product is to heat protein and starch in a certain way and mix with rapeseed oil rich in omega-3. As a result, an “emulsion” is formed, which, in consistency, resembles milk.

Thornberg believes that the main benefits of potato milk are neutral flavor and omega-3 richness. Moreover, this “milk” does not contain allergens. In her opinion, the product can be a good alternative to milk, yogurt, ice cream and cream. And, of course, first of all, potato “milk” will interest vegetarians.

In the first stage, the scientist plans to make a cocktail by mixing the emulsion with applesauce and fruit. “The idea is that she (“Emulsion” – ed.) should be a good and nutritious snack, ”she said.

 

The product has been properly tested and it is hoped that it may hit European stores as early as 2018.
