If you are interested in this issue, then you know that almost all the success of the dish depends on rice for sushi or rolls. After all, if the rice is cooked correctly, then whatever you add will be delicious. What rules should be followed to prepare sushi rice perfectly, like in a restaurant?
1. Rice variety
You can buy Japanese rice, or you can get by with regular round-grain rice. Culinary experts have long been convinced in practice that there is no particular difference between these types of rice. Just do not use the long-grain variety – it is completely unsuitable for sushi!
So, thoroughly rinse the rice grains with cold water 6-7 times (until the liquid becomes absolutely clean and transparent).
2. Water in a ratio of 1: 1,5
We place the rice grains in a spacious saucepan, pouring water, which should be one and a half times the amount of rice used. You do not need to salt the water and season with any spices. But for flavor, you can throw only a piece of kombu seaweed into the pan, but you must definitely get the kombu before the liquid boils.
3. Cooking time – up to 20 minutes
When the water boils, close the lid tightly, make the minimum heat. Cook for 10-15 minutes (until moisture completely evaporates). In any case, the rice should not be on the fire for more than 20 minutes, otherwise there is a high chance of getting overcooked grains that stick to the bottom of the pan! During the cooking process, stir the rice and remove the lid from the pan.
4. Refueling
At the same time, we are engaged in refueling. Pour in rice vinegar (do not confuse with the usual!) Sugar and salt. Over low heat, stirring, wait until the granulated sugar and salt dissolve in the vinegar, then remove the mixture from the stove. You can find ready-made sushi rice sauce on the market, which can be used as a substitute for a mixture of vinegar, salt and sugar.
5. We take “into work” rice already at room temperature
After removing the cooked rice from the heat, steam it under a closed lid for 10 minutes. After that, transfer to a bowl and pour over the dressing. Stir the rice grains with a wooden spatula. Having cooled the rice to room temperature, we proceed to the preparation of sushi and rolls.
