Stuffed pasta is another world-famous Italian dish. Large tubules – cannelloni and large shells – conciglioni are also stuffed. Minced meat can be meat or vegetable, often such a paste is baked with a creamy or tomato sauce.

Recipe for stuffed pasta with minced meat, cottage cheese and spinach

For this recipe, you will need either large shell pasta – conquiglion or large snail-like lumaconi pasta. You will need: – 3 tablespoons of olive oil; – 8 cloves of garlic; – 2 medium onions; – salt and pepper; – 2 teaspoons dried oregano; – 2 teaspoons of ground red pepper; – 1 tablespoon dried basil; – 2 teaspoons of brown sugar; – 500 g lean minced chicken; – 300 g of dry paste; – 200 g tomato sauce; – 1 cup of chicken broth; – 500 g of chopped frozen spinach; 1/4 teaspoon grated nutmeg – 3 cups fresh cottage cheese 9% fat; – 1/2 cup grated parmesan cheese; – 1 large chicken egg; – 250 g mozzarella cheese.

You can replace frozen spinach with fresh spinach, but you will need 4-5 times more of it, since spinach leaves are highly boiled during cooking

Peel the onion and cut into small cubes, peel and chop the garlic. In a skillet, mix the minced chicken with half the chopped onion and chopped garlic, add 2 tablespoons of olive oil, season with salt, black and red pepper, dried oregano and basil, sugar. Add tomato paste and chicken stock.

Simmer the meat sauce over medium heat for 10 minutes. Boil the pasta until half cooked. Thaw the spinach and squeeze out the excess liquid through a colander. Sauté the remaining onion and garlic in a tablespoon of olive oil. Add spinach, grated nutmeg and season with a little salt and black pepper.

Let cool slightly and mix with curd cheese, Parmesan cheese and lightly beaten chicken egg. Stuff the pasta. Pour 2/3 of the meat sauce on the bottom of a baking dish, place the stuffed pasta and top with the remaining sauce. Chop the mozzarella and place on top. Bake the pasta for 25-30 minutes in an oven preheated to 220 ° C.

Cannelloni stuffed with turkey, ricotta and bell pepper

In order to cook stuffed tube pasta, you will need: – 16 cannelloni tubes; – 1 head of diced onion; – 2 minced garlic cloves; – 500 g of minced turkey thighs; – 1 cup fresh spinach leaves; – 1 red bell pepper; – 250 g ricotta; – 1 glass of grated Parmesan cheese; 1/2 teaspoon dried chili flakes 1/2 teaspoon freshly ground grated nutmeg – 1 teaspoon dried basil; – 1 teaspoon dried parsley; – 2 cups tomato sauce; – salt and pepper.

Ricotta is a fresh Italian cheese. It is made from whey. If you don’t have ricotta, substitute 9% fat cottage cheese

Preheat oven to 220 ° C. Bake the pepper; when it cools, peel it off and cut into strips. Heat olive oil in a large saucepan over medium heat and sauté the onions and garlic, add the ground turkey and sauté until golden brown.

In a large large bowl, combine spinach, pepper, ricotta and parmesan cheese, season with chili, nutmeg, basil and parsley, salt and pepper. Add minced meat, season with salt and pepper, stir and fill in cannelloni.

In a baking dish, pour 3/4 cup of the tomato sauce on the bottom. Lay out the stuffed pasta. Pour over the remaining sauce, sprinkle with the Parmesan cheese, cover the dish with cling foil and bake for 20 minutes. Then remove the foil and bake for about 5 more minutes, until the cheese is golden.
