Stuffed eggs are a popular dish in many countries around the world. It is worth noting that in France, Germany and the Netherlands, they are often called Russian eggs. Such an appetizer is especially appropriate after Easter, when there are too many boiled eggs and you want to cook from them not just a salad, but something delicious.

Egg yolk, mayonnaise, a drop of mustard or Worcestershire sauce are enough to stuff the eggs. Other popular additions to the crushed yolk include: – olives; – pickled chopped cucumbers; – capers; – heavy cream and sour cream; – onion; – anchovies; – herring; – bacon.

Thrifty housewives often serve eggs stuffed with crab sticks, many love eggs stuffed with fatty cod liver, but eggs stuffed with red and black caviar, as well as crab meat are considered the most delicious appetizer. There are also exotic recipes for stuffed eggs that will please even the most sophisticated gourmets.

Recipe for Spicy Crab Stuffed Eggs

To prepare this delicious spicy appetizer, you will need: – 6 large chicken eggs, boiled and peeled; – 3 tablespoons of thick mayonnaise; – 1 teaspoon of Dijon mustard; – 1/2 cup canned crab meat; – 1 teaspoon lemon juice; 1/2 teaspoon cayenne pepper – 1 pinch of ground paprika; – chopped chives.

Slice the boiled peeled eggs lengthwise. Using a teaspoon, gently remove the yolks into a separate bowl. Add mustard to them, 2 tablespoons of mayonnaise, mash with a fork into a homogeneous smooth creamy yellow mixture. You can use a blender for this operation.

In order for the eggs to have a beautiful cut, not stained with yolk, wipe the knife every time after you cut the next egg.

Using a pastry bag, place the egg mass into the protein halves. You can just spoon out the yolk, but you won’t get a nice wavy surface. In another bowl, combine the crabmeat, leftover mayonnaise and lemon juice, season with cayenne pepper and paprika, gently lay on egg halves and garnish with chopped onions.

Stuffed eggs with avocado and red caviar

Eggs stuffed with avocados and garnished with red caviar will not only be delicious, but also very elegant due to the combination of bright fresh flowers. Take: – 12 boiled chicken eggs; – 1 tablespoon lemon juice; – a pinch of salt and ground black pepper; – 2 avocados; – 10 ml of olive oil; – 200 g of red caviar.

To make this appetizer even more delicious, dip the peeled boiled eggs in a glass of warm water containing food coloring. This will turn the protein into a bright color.

Cut the eggs in half and remove the egg yolk. Cut the avocado in half, remove the pit, remove the pulp and drizzle with lemon juice. Add 1 yolk to the avocado pulp, add oil, season with salt and pepper, grind with a blender. Place the avocado filling in the egg halves using a pastry bag, garnish with red caviar and serve.
