There is a lot of controversy about seafood. On the one hand, they evoke gastronomic interest and love among gourmets, on the other hand, they remain misunderstood by many people. Experts say that you need to know how to cook squid. And one of the recipes that is considered exotic, but at the same time quite tasty, is stewed squid.

The benefits of squid are undeniable. Indeed, in terms of their composition, they are an order of magnitude richer than poultry meat or even beef. The carcasses of squid contain vitamins, including the most important ones – groups B, E, C and PP. And also squid meat contains all the necessary trace elements: copper, phosphorus, iron, iodine, selenium, etc. In this regard, squid is believed to help cleanse the blood, lower cholesterol, improve muscle tissue, help normalize the gastrointestinal tract and have anti-sclerotic properties. Therefore, you need to eat them regularly.
In most cases, squid is used in boiled form as an independent dish or as an ingredient in a salad. Dried parts of squid are also common. But stewed squids are especially popular with gourmets. This is due to the fact that sea reptiles with this method of preparation are especially tender and original.
In order to cook stewed squid, you will need: – 4 squid carcasses; – 2 pcs. carrots; – 2 pcs. large onions; – 250 g sour cream; – fresh herbs to taste; – salt.
If fresh herbs are not available, you can easily use dried herbs. Alternatively, you can add frozen greens to this dish. If you like spicy food, you can slightly pepper the squid and choose spicy greens.
Grate the carrots on a coarse grater and chop the onion into small pieces. Fry them in a little oil until golden brown. Peel the squid from the film, then scald with boiling water, cut into strips and add to the pan to the carrots and onions. Cut the greens and send them there. After 2-3 minutes add sour cream, salt and let it boil. Then simmer for 1-2 minutes – and that’s it, the dish is ready.
Alternatively, you can also add garlic, butter, flour, cream to the squid. All these products will help to add a more interesting taste to the dish, make the gravy more delicate and creamy, and also help to fully reveal the taste of seafood.
Squid stewed in red wine and tomato paste are considered the favorite Christmas dish of Italians. To prepare 6 servings of such a delicacy, you will need: – 1 kg of peeled squid; – 4 cups of tomato sauce; – 250 ml of red wine; – 2 tbsp. l. fresh lemon juice; – 1 tbsp. l. olive oil; – 2 cloves of garlic; – 1 tsp. ground black pepper; – 1/2 tsp. ground red pepper; – 1 tsp. dry basil; – 1/3 cup grated Parmesan.
Cut the squid into rings or strips, as it is more convenient for you. Combine tomato paste, wine, lemon juice, oil, spices and cheese and simmer for half an hour. The alcohol will evaporate during this time, and the sauce will get a very unusual aroma and original sound. After this time, add squid to the sauce and continue simmering for about half an hour. Remember to stir. The degree of doneness of squid is easily determined by their appearance, it should become swollen and opaque.
Don’t try to speed up the process by increasing the fire. This will not achieve the desired result, but only spoil the dish. If the squid is overheated, it will become rubbery.
You can stew squid with your favorite vegetables. The principle is the same as in the first recipe, only you can add peppers, eggplants, zucchini, etc. to carrots and onions.
What to Consider When Eating Squid
Squid, like any marine life, is a pretty strong allergen. In this regard, it is not recommended to eat it for people suffering from any allergic diseases, because the result can be unpredictable.
Also, do not overuse salt when eating squid. You run the risk of acquiring edema as a result of fluid retention in the body.
And, of course, one should take into account the fact that the squid is an inhabitant of the deep sea, into which the toxic waste of human life often gets. The underwater world is capable of accumulating these toxins. Therefore, you should not attack sea reptiles and eat them in kilograms. However, eating marine inhabitants in moderation will not bring any harm to human health.
