Steak from Avila Restoration Quality

For many years, the protection of local products has been a fact and there have been many local associations and entities that have sought that their references are guaranteed and thus be able to carry out quality work.

The products of the field and the cattle ranches traditionally adhered to denominations of origin, to be shown under their umbrella, as guarantors of production, quality and process management standards.

In this framework, Abulense Association of Hoteliers, has carried out the development of the collective brand “T-bone steak from Ávila CR”

The initiative seeks in the catering establishments where the beef product is served, to be able to guarantee that the product is and preserves all the properties of the authentic Chuleton de Avila.

We are facing one of the star products of Spanish gastronomy that provides special organoleptic qualities, due to its origin, genetics and the diet of the cattle, which is important to differentiate from the rest of imported or national meats that, without neglecting them, are simply different.

The promoters have sought not only the guarantee of origin of the product but also help the hotelier and advise on the correct preparation and presentation of the products. “Roasts”, to maintain its qualities and provide that differentiating aspect of it.

It has been many years of work, by the association and the municipality of Avila, bringing to fruition a few days ago the reality of constitution and approval of the “Teaches ” by Spanish Patent and Trademark Office of the Ministry of Industry, Energy and Tourism  with the granting of the Collective Trademark No. 3.106.758.

In order to obtain the Mark, different actions were carried out, which began in mid-2013, where a roadmap was drawn up, which has finally been fulfilled.

  • Surveys were conducted among hoteliers in the capital in order to establish a product standard.
  • A brand design with characteristic features of the cattle was promoted with the participation of more than 60 proposals until the currently registered one was visualized.
  • Tastings were carried out with experts to taste and define the appearance and finish of the cooked pieces.

Thus until reaching the final slogan of the same providing the motto of Restoration Quality ”(CR)

Adherence to the brand

From now on, it is the establishments that dispense the product that will be able to adhere to its promotion, complying with the requirements that the regulatory regulation of the brand certifies.

The Rules of Use that endorse the brand meet some minimum requirements that are summarized in:

  • The offered ribeye should measure between 20 and 30 centimeters in length, and a thickness of 2,5 to 4 centimeters. 
  • The weight of the individual piece can never be less than 600 grams. 
  • The pieces must come from cow loins (high or low) of autochthonous cattle from the province of Avila. 
  • They must be made exclusively on a grill or charcoal. 
  • The seasonings used may only be salt and oil.

Currently there are already 16 affiliated hospitality establishments, and from the association the dissemination campaign is already beginning so that the different establishments of the national territory that want to join can not only do so but also guarantee an authentic product of haute cuisine.
