How to prepare squid tentacles for cooking
As a rule, squid tentacles are sold as well as carcasses, frozen. When buying them in a store by weight or in packaging, pay attention that the tentacles are not frozen into lumps, this indicates that the storage conditions have been violated, the product has already been thawed at least once. Such meat is already considered stale and substandard.
You also need to defrost the tentacles of squid correctly. Leave them in the package for a while at room temperature. It takes 1,5-2 hours to defrost them. Then rinse the tentacles in cold running water. After that, they should be peeled off the thin skin. This can be done quickly: put the tentacles in a colander and immerse it in boiling water for a few seconds. Rinse the tentacles in cold water, peeling off the softened skin with your fingers.
How to cook squid tentacles
Typically, tentacles are pre-boiled to be used in salads or fried in batter. They, like squid carcasses, cannot be overcooked so that the meat remains soft and retains its taste and aroma, very reminiscent of the taste of lobster meat.
Place the peeled tentacles in salted boiling water, wait for it to boil again, remove the pot from the stove and let the tentacles soak in hot water for 15 minutes. After that, they are already ready for use. If you lightly pepper them, sprinkle with mayonnaise and sprinkle with fresh herbs, it will already be delicious. But you try to cook them in batter.
