Spotykach is a drink that is often confused with liqueur. This is a hot sweet alcoholic drink, which is based on fruits and berries with sugar, filled with vodka. Ukraine is considered his historical homeland.
What is the difference between spotykach and liquor
Usually spotykach is made on the basis of fruits and berries such as currants, strawberries, raspberries, grapes, plums, cherries, sweet cherries, apricots, cranberries and mountain ash, etc. In addition, herbs and spices are also used: anise, coffee, nutmeg , mint and many others.
If in terms of strength it is between tincture and liqueur, then in terms of sweetness, stotykach is closer to liquor – for its sweetness and lower strength, it is considered to be a “female” drink.
Spotykach: a classic recipe
Ingredients:
- any fruits or berries – 1 kg;
- strong alcohol (vodka or moonshine, without a pronounced smell) – 0,75–1 liter;
- granulated sugar – 350 g;
- water – 0,5 l.
Preparation:
- The fruits are washed (if necessary, cut into pieces), sent to the pan, pour about 200 g of sugar, pour in water and put on fire.
- After boiling, reduce the heat and cook for another half an hour, stirring regularly.
- Remove the pan from the heat, add alcohol and return to the fire.
- After boiling, remove the mixture from the stove.
- Leave to cool under the lid. At this point, you can add more sugar to taste.
- Pour into a jar or bottle (along with berries), cork, move to a dark place for two weeks. Shake the bottle every 2-3 days.
- Filter spotykach, pour into containers, close tightly and insist for three days (at least).
Spotykach with rowan according to the Varangian recipe
The recipe calls for the following:
- rowan – 500 g;
- vodka or moonshine – 1 liter;
- water – 0,3 l;
- granulated sugar – 500 g.
Preparation:
- If the rowan was harvested before frost, it is placed in the freezer overnight.
- The berries are washed, poured with water, sugar is poured out.
- The berries are boiled for an hour (until the peel bursts), after boiling, the fire is reduced.
- Pour vodka into the broth (it is better to remove the pan from the stove at this moment) and bring to a boil, after which it is removed from the heat.
- Allow the broth to cool and pour into a jar along with mountain ash.
- They insist two weeks.
- Then it is poured into another container, the mountain ash is squeezed through cheesecloth, the liquid is bottled and hermetically sealed.
- Leave for another two or three weeks, and better – for a few months.
Spotykach from currant
Ingredients needed are:
- currants – 1 kg;
- granulated sugar – 1 kg;
- strong alcohol – 1 liter;
- water – 500 ml.
Preparation:
- First, spoiled berries are selected, then they are washed and dried.
- Transfer to a container and knead until a homogeneous mass is obtained. Squeeze the juice from crushed currants with gauze.
- In a saucepan combine water and sugar and make a thick sugar syrup.
- Currant juice is poured into syrup and boiled until boiling.
- Remove the container from the fire, add alcohol, mix and continue to cook.
- Without bringing to a boil, cook until the mixture thickens, then remove from heat and allow to cool.
- Pour into bottles and clean in a cool place. Insist for several weeks.
Cherry Spotykach
The recipe for cherry spotykach is very simple. To prepare it, you need the following:
- cherry – 300 g;
- prunes – 50 g;
- strong alcohol – 0,5 liters;
- granulated sugar – 300 g.
Preparation:
- Cherries are covered with sugar and left for several hours.
- Then the container with the cherry is put on a small fire and, stirring, boil until the sugar is completely dissolved.
- Prunes are added and the pan is removed from the heat, allowed to cool.
- Berries with syrup are bottled and filled with alcohol.
- Let it brew for 10-15 days.
- Filtered and bottled again. Leave for 3-4 days.
Mint Spotykach Recipe
Necessary ingredients:
- mint – 70 g;
- strong alcohol – 1 l;
- granulated sugar – 200 g.
Preparation:
- Melt sugar, make syrup. Mint is added there and boiled for another 15-20 minutes.
- Vodka is mixed with syrup, the stove is turned off, the mixture is left to cool under the lid.
- Bottled and left for 5-7 days.
- Store in a dark place.
Spotykach from prunes
For cooking you will need:
- prunes – 400 g;
- granulated sugar – 400 g;
- vodka – 500 ml;
- water – 300 ml.
Preparation:
- Prunes are thoroughly washed.
- Syrup is made from sugar and water.
- The syrup is cooled and mixed with prunes and an alcoholic component.
- Pour into a jar or bottle and insist for 2 weeks.
- The liquid is filtered and again poured into bottles.
Raspberry spottykach recipe
For a drink you will need:
- raspberries – 1 kg;
- granulated sugar – 1 kg;
- water – 700 ml;
- strong alcohol – 750 ml;
- vanillin – to taste.
Spotykach is prepared like this:
- Vodka insist on vanilla for two days.
- The berries are pre-sorted, then kneaded with a spoon and transferred to a layer of gauze. Then the juice is squeezed out.
- Syrup is made from water and sugar.
- The syrup is mixed with juice and brought to a boil.
- Alcohol is poured into the mixture removed from the fire and put back on the stove.
- Stirring, heat over low heat, do not bring to a boil.
- Bottled and hermetically sealed.
Aromatic Mint Spotykach: Recipe with Vanilla
The recipe for a mint drink with vanilla is not much different from a recipe without vanillin.
For cooking you will need:
- mint – 70-100 g;
- vodka – 1 liter;
- granulated sugar – 200 g;
- vanilla to taste.
Prepare this variation of the drink as follows:
- Vanilla is poured with vodka and insisted for two weeks.
- Prepare syrup with mint.
- After adding mint, the syrup is boiled for another 15 minutes.
- The tincture is pre-filtered, and then mixed with syrup, cover the pan with a lid and leave to cool.
- Pour over and leave to brew for 5-7 days.
Spotykach with Lemon Recipe
For cooking you will need:
- lemons – 5 pieces;
- vodka – 0,75 l;
- granulated sugar – 400 g;
- water – 250 ml;
- spices – optional.
Prepare as follows:
- Wash the lemons, cut the zest and cut out the pulp.
- Water and sugar are mixed and boiled until completely dissolved.
- Lemon pulp, cut into pieces, and half the zest are added to the syrup.
- Boil for another 10-15 minutes and add alcohol.
- Leave the mixture under the lid until it cools completely.
- Pour into a jar and leave for a week.
- Filter, squeeze the lemon and leave for another 3-4 days.
Spotykach from apricots
Since this recipe is actually a basic one, the amount of ingredients can be changed to your liking. For this version you will need:
- apricots – 1 kg;
- strong alcohol – 0,75 l;
- granulated sugar – 400 g;
- water – 0,5 l.
Prepare in this way:
- The berries are pitted and washed.
- Then the apricots are laid out in a saucepan, sugar is poured into the same place and poured with water and put on fire.
- After boiling, the fire is reduced to a minimum and the mixture is boiled for another half an hour, not forgetting to stir.
- Vodka is poured into the berry syrup, heated almost to a boil and the fire is turned off.
- The drink is allowed to cool under the lid, then poured into jars and corked them.
- Insist 10-15 days.
- Then spotykach is filtered and bottled.
- Re-leave for two weeks.
Nut tincture Spotykach
This recipe bears the name spotykach rather conditionally, since it is actually a tincture. For cooking:
- walnuts – 500 g;
- vodka – 0,75 l;
- granulated sugar – 400 g;
- fruit pits – 10 peach or 20 any other fruits;
- spices – to taste.
Prepare as follows.
- Walnuts are divided into several parts and poured with vodka. Leave for a month in the sun, then filter.
- Sugar, crushed fruit pits, spices are added to the filtered tincture, mixed and left for a week.
- Shake the tincture once a day.
- Then filtered, bottled and tightly closed.
Spotykach coffee drink
For cooking you will need:
- coffee – 120-150 g;
- water – 1 liter;
- vodka – 0,5 liters;
- granulated sugar – 500 g.
Preparation:
- Ground coffee is poured with cold water and left for a day.
- The liquid is filtered and boiled for 10-15 minutes.
- Allow to cool, filter again, add sugar and cook over low heat for 5 minutes.
- Add the alcohol component and return the pan to the stove.
- Cook without bringing to a boil. After the appearance of steam, the pan is removed from the stove.
- Allow the drink to cool under the lid and pour.
- Ideally stored in a cellar or refrigerator, but you can do with any dark and cool place.
Spotykach cranberry liqueur
It is prepared in the same way as with raspberries, since this is a standard recipe.
How to make spotykach at home with chokeberry
You will need ingredients such as:
- chokeberry – 1 kg;
- granulated sugar – 1 kg;
- strong alcohol – 1 liter;
- water – 750 ml.
It is prepared in the same way as a blackcurrant spottykach:
- The berries are sorted, washed, cleaned of litter and allowed to dry.
- Transfer to a container and knead so that juice appears. The crushed mountain ash is transferred to gauze and the juice is squeezed out.
- They boil syrup.
- Pour the juice from the mountain ash into the syrup and bring the resulting mixture to a boil.
- Remove from heat, pour in vodka, mix and return to the stove on a small fire.
- Without bringing to a boil, keep on fire until the mixture thickens, then remove from the stove, cover the pan with a lid and let cool.
- Bottled, corked and stored in a cool, dry place. Let it brew for 7-10 days.
Plum spotykach according to the classic recipe
The following is required:
- plums – 1 kg;
- granulated sugar – 500 g;
- water – 1,5 l;
- vodka – 0,5 l.
Prepare as follows:
- Plums are washed, pitted, cut and allowed to dry.
- Put plums, sugar and water in a saucepan.
- After boiling, cook for 20 minutes.
- Allow to cool, pour in vodka and mix.
- Pour over and leave for 10-15 days.
Unusual recipe for spotykach with nutmeg and cloves
According to this recipe, the drink is made only from spices, without the addition of berries and fruits.
Ingredients:
- cinnamon and cloves – 5 g;
- nutmeg – 10 g;
- vanilla – 20 g;
- vodka – 0,5 l;
- granulated sugar – 400 g.
The tincture is prepared in this way:
- For two weeks, vodka is insisted on spices, while shaking the container with the drink daily.
- After that, the mixture is filtered, sugar is poured into it and boiled.
- The liquid is filtered again and poured into bottles.
How to cook spotykach at home with orange zest
Orange zest is added to an anise-based drink. However, if desired, it can be added to almost any recipe – for example, as a basis for infusing vodka.
For cooking you will need:
- anise – 50 g;
- vodka – 1,5 l;
- granulated sugar – 2 kg;
- water – 3 l;
- orange peel – 10 g;
- cloves, cinnamon, other spices – to taste.
Prepare as follows:
- Anise is washed, ground and poured with vodka. Insist from three to five days, then filter.
- Mix water and sugar and make sugar syrup.
- Tincture and spices are added to the hot syrup.
- Pour into jars and leave to brew for 4-5 days. The drink is shaken daily.
- Filter, pour into bottles and clean in a dark place for several months.
Storage conditions for women’s drink
The drink is stored for three years, while long-term storage is possible only in a cool place, away from sunlight.
