Yes, spinach, due to the high content of carotenoids, iron and dietary fiber, should be a permanent part of our diet. Regular consumption of spinach can protect against cancer (mainly cancer of the lung, colon, stomach, larynx) and anemia. However, when it comes to iron contained in spinach, it is worth remembering that a significant part of it is lost in cooking (washing, grinding, cooking). To reduce the effects of this process, soaking, fine chopping and prolonged heating must be avoided. Additionally, sprinkle the spinach with lemon juice, which will partially “retain” the iron.
