How to make rustic spinach and cheese pie
Sift flour, one teaspoon of salt, and baking powder into a wide bowl. In a separate bowl, whisk together milk, one egg and 1/3 cup olive oil, add dry ingredients and knead to a thick, smooth dough. Flour the work surface, lay out the dough and knead until smooth, about 2 minutes. Form a ball, wrap the dough with plastic wrap and refrigerate for 30 minutes.
Peel the onions, rinse and dry, cut into small cubes, chop the green onions into small pieces. In a skillet, heat 1 tablespoon of vegetable oil, fry the onions and green onions until soft, put in a bowl. Rinse the spinach leaves under running water, place in a saucepan with the remaining liquid on them, cover and cook over medium heat for about 3 minutes. Transfer the spinach to a colander, squeeze out excess liquid and place over the onion. Add feta and mozzarella, remaining raw eggs and salt, dill, mint, parsley, pepper and cloves, mix well.
On a lightly floured surface, roll out the dough into a 40 cm circle. Place in a greased baking dish with a diameter of 22 centimeters, fill and cover it with the dangling edges of the dough, without being embarrassed by the natural folds that form, leaving an open circle with a diameter of 12 centimeters in the center. Brush the surface with olive oil.
