The attitude towards canned green tomatoes is ambiguous. Some like them, others not so much. But everyone will like the spicy salad, especially men. This appetizer is an excellent option for meat, fish and poultry dishes. After all, there is so much “light” in it that any food seems tastier.
All these epithets refer to Cobra green tomato salad for the winter. Moreover, there are no difficulties in cooking, but the range of preparations for the winter will increase significantly.
Cobra salad options
Cobra salad, which requires green or brown tomatoes, is spiced with garlic and hot peppers. There are various ways to prepare snacks for the winter, we will tell you about them.
With sterilization
Option 1
To prepare a spicy Cobra salad for the winter, we will need:
- 1 kg 500 grams of green tomatoes;
- 2 heads of garlic;
- 2 hot peppers (you can chili to give a “fiery” sharpness);
- 60 grams of granulated sugar;
- 75 grams of non-iodized salt;
- 50 ml of vegetable oil;
- 1 tablespoon of vinegar essence;
- 2 lavrushkas;
- 10 black and allspice peas or a ready-made mixture of ground peppers.
Fineness of preparation
- Soak green tomatoes for two hours in cold water to remove bitterness. Then we thoroughly wash each fruit and put it on a clean towel to dry. After that, let’s do the cutting. From large tomatoes we get about 8 slices, and from small ones – 4.
- We spread the slices of green tomatoes in a wide bowl so that it is convenient to mix, add half a spoon of salt and set aside for two hours. During this time, the vegetable will give juice. Such a procedure is necessary to get rid of bitterness.
- While the green tomatoes are infused, let’s take care of the garlic and peppers. We remove the upper scales and thin films from the garlic, and cut off the tail from the peppers, and leave the seeds. After that, we wash the vegetables. To grind garlic, you can use a garlic press or a grater with small holes. As for hot pepper, according to the recipe, it must be cut into rings. If the peppers are large, then cut each ringlet in half.
Perform all actions with hot peppers in medical gloves so as not to burn your hands.
- Drain the juice released from green tomatoes, add garlic and pepper, lavrushka, the rest of the salt, granulated sugar and a mixture of peppercorns. Then pour in vegetable oil and mix gently so as not to damage the integrity of the slices. Since one of the ingredients of Cobra salad is hot pepper, it is not recommended to mix it with bare hands. You can do this procedure with a large spoon or wear rubber gloves.
- After trying the Cobra salad for salt, add this spice if necessary. We leave for half an hour to infuse and sterilize jars and lids. It is best to use half-liter jars. As for the lids, both screw and tin ones are suitable.
- In hot jars we stuff a salad of green Cobra tomatoes, add juice to the top and cover with lids.
- We put to sterilize in a pot of hot water, laying a towel on the bottom. From the moment the water boils, we hold liter jars for a third of an hour, and for half-liter jars, 10 minutes is enough.
The jars taken out are immediately hermetically sealed, put on the lid and wrapped with a fur coat. After a day, the cooled Cobra salad from green tomatoes can be removed in a cold place. Enjoy your meal!
Option 2
According to the recipe we need:
- 2 kg 500 grams of green or brown tomatoes;
- 3 cooking garlic;
- 2 pods of hot chili peppers;
- 1 bunch of fresh parsley
- 100 ml of table vinegar;
- 90 grams of granulated sugar and salt.
Preparation of vegetables is the same as in the first recipe. After cutting the vegetables, mix them with chopped parsley, sugar, salt and vinegar. We leave the composition until the crystals are completely dissolved and juice appears. After shifting the green tomato salad into jars, we sterilize.
Without sterilization
Option 1 – Raw Cobra Salad
The appetizer, as always, is very spicy and tasty. To prepare a salad of tomatoes that did not have time to turn red, you need the following ingredients:
- green or brown tomatoes – 2 kg 600 grams;
- garlic – 3 heads;
- sprigs of fresh parsley – 1 bunch;
- sugar and salt 90 grams each;
- table vinegar – 145 ml;
- hot pepper – a few pods, depending on taste preferences.
- We cut the washed and peeled tomatoes into slices, cut the hot pepper into circles, removing the seeds first, otherwise the appetizer will be so fiery that it will be impossible to eat it. Then chop parsley and garlic.
- We put all the ingredients in a large saucepan and mix, then sugar, salt, pour vinegar. Let it brew for two hours, so that the juice has time to stand out, and then spread the Cobra salad in pre-sterilized jars, adding juice to the top. We close with ordinary plastic lids and put in the refrigerator.
Option 2 – Furious Cobra
An appetizer of green or brown tomatoes, according to the recipe below, will appeal to lovers of very spicy salads. Although the sharpness is somewhat reduced due to sweet and sour apples and sweet bell peppers.
What products will you need to stock up in advance:
- green tomatoes – 2 kg 500 grams;
- salt – 2 tablespoons with a slide;
- apples – 500 grams;
- sweet bell peppers – 250 grams;
- hot pepper (pods) – 70 grams;
- onions – 500 grams;
- vegetable oil – 150 grams;
- garlic – 100 grams.
Stages of preparation
- We clean and wash the vegetables, let the water drain. Peel the apples, cut out the core with seeds. Cut off the stems of the peppers and shake out the seeds. Remove the top flakes from the onion and garlic.
- Green tomatoes, apples and sweet bell peppers are cut into pieces and passed through a meat grinder with small holes. Then we put it in a deep container with a thick bottom, pour in the oil, salt. We put on the stove under the lid and simmer over low heat for 60 minutes.
- While the vegetable and fruit mass is being prepared, grind the hot pepper and garlic. When an hour has passed, add these ingredients to the Cobra salad, mix and boil for four minutes.
- We put the hot appetizer into prepared sterile jars and roll them up with glass or tin lids. Put it on the table and wrap it in a towel. In a day, when the Cobra salad has completely cooled down for the winter, we will put it in the refrigerator. You can serve as an appetizer for any meal.

Instead of a conclusion – advice
- Choose fleshy varieties of tomatoes, as they do not boil too much during sterilization.
- All ingredients must be free of rot and damage.
