Garnish the spelled with garlic, lemon and herbs. Take: – 1 ½ cups of spelled; – 3 ¾ cups of chicken stock; – 2 tablespoons of lemon juice; – 2 tablespoons of vegetable oil; – 12 cloves of minced garlic; – ¾ teaspoon of salt; – ¼ glass of chopped cilantro greens; – 2 tablespoons of chopped mint greens; – 2 tablespoons of lemon zest.
Place the spelled in a sieve and rinse under running water. Wash until the water runs clear. Pour the broth into a saucepan, add lemon juice and heat over low heat. Heat the oil in a deep skillet and fry the garlic until golden brown. Add the spelled and sauté, stirring occasionally, for another 2 minutes. Pour in warm broth and salt, cover and simmer for an hour. Turn off the heat and let stand for 10 minutes under the lid, then add lemon zest and herbs, stir and serve as a side dish with grilled meat or poultry.
Make Vegan Italian Spelled Soup. You will need: – 1 cup of spelled; – 1 cup of pearl barley; – 1 cup of chickpeas; – 1 cup lentils; – 1 tablespoon of olive oil; – 2 heads of onions; – 2 carrots; – 1 bunch of parsley.
Peel carrots and onions. Cut the onion into half rings, and grate the carrots on a coarse grater. Bring 4 cups filtered water to a boil. Add spelled and pearl barley. Bring to a boil and simmer for 30 minutes over low heat, uncovered. In a separate bowl, boil the chickpeas and lentils, following the instructions on the package. Fry the onions and carrots in vegetable oil. Chop the parsley. Add legumes to spelled and barley, add carrots and onions, stir and serve, seasoning with herbs.
