Sour cream pies, or, as the people call them, sour cream, are prepared surprisingly quickly and easily, and sour cream, which is included in large quantities in the dough for these pies, gives them softness, extraordinary lightness and delicate taste.

Sour cream pie with raisins: recipe

Necessary ingredients:

– 600 grams of premium wheat flour; – 300 grams of sour cream; – 3-4 chicken eggs; – 200 grams of raisins; – 300 grams of granulated sugar; – 100 grams of butter or butter margarine; – 1 lemon; – 1 teaspoon of baking soda.

Sour cream pie preparation method:

Grind eggs thoroughly with granulated sugar. Mix the resulting mass with softened butter and sour cream. Grate the zest removed from the lemon on a fine grater (you can also use the orange zest). Add baking soda, quenching with lemon juice.

Sprinkle peeled, washed and dried raisins with a small amount (just take 1-2 tablespoons) of sifted flour, roll on all sides. This is necessary so that when baking, all the raisins do not end up at the very bottom of the sour cream pie. Stir the raisins into the egg and sour cream mass, then add flour and knead the dough.

The filling for sour cream pie can be very diverse: from cherries, apples, nuts, dried apricots, cottage cheese or prunes

Prepare a baking dish: line the bottom with baking paper, and grease the sides with vegetable oil. Transfer the dough to a mold and place in an oven preheated to 170 ° C. Bake the sour cream for 35-40 minutes. When the cake has cooled, sprinkle with powdered sugar on top.

Sour cream pie with raspberries: recipe

Necessary ingredients:

– 300 grams of premium wheat flour; – 300 grams of granulated sugar; – 250 grams of sour cream; – 100 grams of butter; – 4 chicken eggs; – 300 grams of fresh or frozen raspberries; – 1 bag of baking powder; – 1 bag of vanilla sugar.

Method of preparation:

Beat the eggs with granulated sugar at high speed until a thick, fluffy foam is obtained. While whisking, add softened butter. Gradually add sour cream, add baking powder, flour and continue beating until smooth. Grease a deep dish with vegetable oil and pour half of the dough into it.

It is recommended to add frozen berries to the dough without defrosting: this way they will retain much more nutrients.

Put the raspberries in an even layer and pour the rest of the dough on top. Preheat the oven to 150 ° С and bake the pie in it for 1 hour. The finished sour cream can be covered with sugar icing.

To prepare the glaze, dilute 50 grams of sugar with a little water and bring to a boil while stirring continuously. Cook for a few minutes, covered with a lid, over low heat until a thick caramel consistency. To check the readiness of the caramel, a small portion of the syrup is poured with cold water: if the caramel rolls into a ball with your finger, then it is ready. Put the pan with caramel in a bowl with cold water, cool to 40 ° С and, whisk the mixture white, refrigerate. Then heat in a water bath to 60 ° C and cover the cooled sour cream.

Sour cream pie with cottage cheese: recipe

Necessary ingredients:

– 250 grams of cottage cheese; – 200 grams of sour cream; – 50 grams of butter; – 200 grams of premium wheat flour; – 50 milliliters of milk; – 2 chicken eggs; – 150 grams of granulated sugar; – 200 grams of berries or fruits (optional); – 1/2 bag of baking powder; – 1 gram of vanillin.

Method of preparation:

Add 150 grams of cottage cheese to the softened butter and knead thoroughly, then pour in milk at room temperature and mix.

Add 75 grams of granulated sugar, baking powder to the curd-butter mass and stir well. Then sift the wheat flour and knead the dough with a mixer at low speed.

Prepare a baking dish by greasing it with vegetable oil and lightly sprinkling with breadcrumbs or semolina. Knead the dough, transfer to the mold and distribute it evenly over the surface.

Mix the remaining granulated sugar with eggs and beat well until bubbles form. Then mix the eggs with sour cream, the rest of the cottage cheese, vanilla and 1 tablespoon of flour. Continue stirring until the mixture is smooth.

It will turn out very tasty if you add a little cocoa powder or small pieces of dark chocolate to the curd filling.

Pouring the resulting mass onto the dough, put berries or pieces of fruit on top. These can be cherries, raspberries, blueberries, currants, gooseberries, blackberries, apricot, mango, or peach slices. The pie will be even more beautiful by using berries and fruits of different colors, such as cherries and peaches.

Preheat the oven to 200 ° C and bake the sour cream pie with cottage cheese for 30–35 minutes. Cool the finished pie, sprinkle with powdered sugar on top and cut into portions.
