Sour cream pancakes in Russian: video recipe
The name “pancakes” is closely related to the Latin word “oleum”, which means “butter” in translation. This is no coincidence. As a rule, pancakes are fried in a pan with oil. There are many recipes for this traditional Russian cuisine. The pancake dough can be kneaded in water (filtered or mineral), beer, milk, kefir, yogurt or sour cream.

How to cook pancakes with sour cream
Pancakes made according to this old recipe are very delicate and light. To prepare them you will need:
– 2 eggs; – 250 grams of sour cream; – 35 grams of wheat flour; – 1 ½ tablespoon of sugar; – ½ teaspoon of salt; – ½ teaspoon of baking soda.
To make the pancakes on sour cream airy and fluffy, you need to add baking soda or baking powder to the dough.
Beat the eggs lightly with a whisk or fork. Then add sour cream, flour, sugar, salt, soda and stir everything thoroughly until smooth. Make sure there are no lumps.
Then heat a skillet with a handle or a special pancake maker well over a fire. Pour the prepared dough into it at the rate of 1 tablespoon for each pancake. Spread them in a circle in the pan.
Fry the pancakes until bubbles are bubbling over the top. Then turn over and fry the pancakes on the other side until the bottom is lightly browned.
Serve sour cream pancakes with maple or fruit syrup, jam, honey or fresh fruit.
Recipe for lemon pancakes with sour cream
On sour cream, you can also cook mushroom, chicken, banana, berry or lemon pancakes. To make pancakes with lemon, you need to take:
– 140 grams of wheat flour; – 60 grams of granulated sugar: – 1 ½ teaspoon baking powder for dough; – ½ teaspoon of baking soda; – ¼ teaspoon of salt; – 175 grams of sour cream; – 80 milliliters of milk; – 60 milliliters of lemon juice; – 45 grams of melted butter; – 1 egg; – 1 ½ teaspoon of vanillin; – zest of 2 lemons.
The lemon pancake dough should be thick and bubbly, similar to muffin dough.
Heat a skillet with a handle well over a fire. In a large bowl, thoroughly combine flour, sugar, baking powder, baking soda, and salt. In another bowl, beat well the sour cream, milk, lemon juice, melted butter, egg, and vanillin. Combine mixtures from two bowls, mix very thoroughly and whisk. Then add the zest of two lemons into the dough, which must first be grated on a fine grater.
Pour a tablespoon of dough into a hot skillet for each pancake. When the top of the pancakes is bubbly, turn them over and cook until the bottom is lightly browned.
Lemon pancakes are served as soon as they are ready. Separately, you can serve honey or sweetened sour cream.
