How to cook soup with forest mushrooms and meat
One of my favorite mushroom dishes is wild mushroom soup with meat. For those who are on a diet, chicken is suitable, while the rest can use pork or beef to make the soup more rich. What will be required:
- meat – 0,5 kg;
- potatoes – 2-3 pcs.;
- onion – 1 pcs .;
- carrots – 1 pc.;
- mushrooms – 400 g;
- vermicelli – 50 g;
- Spices to taste.
You should start with the fact that the meat, cut into cubes, must be sent to a pot of cold water and put on fire. Fresh forest mushrooms must be boiled separately from meat with the addition of onions. Onions will become a safety indicator: blue color indicates that mushrooms cannot be eaten. At this time, you need to wash and cut the vegetables. Onions and carrots must be stewed in a pan in sunflower oil. After a couple of minutes, add potatoes and fry everything for about 3 minutes. Then add all the vegetables and mushrooms to the pan with meat. When all the ingredients are cooked, add vermicelli, bay leaf and peppercorns to taste. - onion – 0,5 pcs .;
- carrots – 0,5 pcs .;

The preparation of this soup is quite simple, and the taste of soft and creamy will please everyone. First you need to boil the fillet, when it boils, salt and cook until tender. Cut the boiled chicken into cubes, and finely chop the onion and fry in oil for about 7 minutes. Grate the carrots and add to the onions to fry for about 5 more minutes. Everyone knows that the classic recipe for pea soup involves the presence of smoked meats. However, this recipe is different from the classics and is a lightweight option. So, pea soup is prepared with mushrooms and chicken meat, and for this you need:
- dry peas – 150 g;
- champignons – 100 g;
- chicken – 100 g;
- potatoes – 2 pcs .;
- carrots – 0,5 pcs .;

However, there is an opportunity to surprise your guests by preparing an unusually tasty soup with salted forest mushrooms and meat. This recipe is not new at all – it was prepared by our great-grandfathers in ancient times. To make soup for 4 servings you will need:
- salted mushrooms – 150 g;
- potatoes – 3 pcs .;
- small onion – 1 pc.;
- carrots – 1 pcs .;
- egg – 1 pcs .;
- Spices to taste.
Send potatoes to boiling water and leave to boil. Fry chopped onions and carrots in a pan until golden brown. Chop the salted mushrooms not very finely and add to the vegetables in the pan. Simmer everything together for about 4 minutes. When the potatoes are ready, add vegetables with mushrooms to the pan and cook for about 20 minutes. Only then add salt to your taste. It is not worth salting in advance, as you can oversalt due to the presence of salted mushrooms. With a whisk, mix the eggs until smooth and pour them, stirring slowly, into the finished soup. Leave to infuse for 10 minutes.
Buckwheat soup with champignon mushrooms and meat

- chicken – 200 g;
- potatoes – 2 pcs .;
- buckwheat – 3 tbsp. l;
- carrot – 1 units;
- champignons – 300 g;
- onions – 1 pcs.

You need to start by putting boiled chicken meat. After that, cut the mushrooms not very finely and evaporate the water from them in a pan. Then fry until golden brown, salt and put on a separate plate. Slice potatoes and put into boiling water to boil. Then add buckwheat and cook for about 10 minutes, do not forget to salt. Add mushrooms and cook for another 7 minutes. Fry chopped onions and carrots in a pan until golden brown and send everything to the pan. Add spices to taste. In order to cook homemade rice soup with chicken meat and mushrooms, a lot of effort is not needed. It is enough to have everything you need at hand and a little time. All you need is:

- rice – 90 g;
- mushrooms – 200 g;

Next, pour the rice into the finished broth and cook until it is ready for about 35 minutes. Don’t forget to salt.
