Classic hodgepodge “Autumn in a jar”
This hodgepodge for the winter is just a great dish. This recipe is a classic vegetable platter in a jar that you can easily make at home.
To prepare a dressing for borscht for the winter with cabbage, you will need:
- 1,5 kg of cabbage;
- 1 kg of pepper;
- 1,5 kg of champignons;
- 1,5 kg of onions;
- 1,5 kg carrots;
- 2 kg of tomatoes;
- 1,5 kg of cucumbers;
- 0,25 l of vinegar (9%);
- sugar;
- salt;
- 180 g vegetable oil;
- seasonings and spices.
What to do:
- Peel and wash all vegetables that are used for harvesting under running water.
- Cabbage must be chopped, but here you need not to overdo it and do not cut it too finely.
- Cut the pepper into small (up to 0,5 cm) strips.
- But the tomatoes need to be cut into slices.
- Cucumbers, carrots and onions carefully cut into rings, like a salad.
- Mushrooms also cut into small plates.
- Now fry cabbage, carrots, mushrooms and onions in sunflower oil. Keep in mind that the vegetables will be juicier if you cook them all separately instead of together.
- After they have been fried, place them all in a small cauldron to simmer.
- Throw all the other ingredients there, with the exception of vinegar.
- Now you need to put it all out on fire for half an hour.
- A few minutes before you turn off the heat, pour vinegar into the cauldron.
- The dish is ready, you can put it in jars and roll it up.

In addition to the classic method of making hodgepodge, there are many more variations.
With tomatoes
Tomatoes will add juiciness and sourness to your dish.
For this workpiece you will need:
- 750 g cabbage;
- 2-3 onions;
- 2 pcs. sweet pepper;
- 4-5 tomatoes;
- 3–4 tbsp. l. tomato paste;
- sugar;
- salt;
- 2 tbsp. l. vinegar (9%);
- spice;
- 100 ml. sunflower oil.
How to prepare such a hodgepodge:
- First of all, the cabbage must be cut into small strips. For the dish, winter varieties that are easier to cut are perfect.
- Peppers and onions also need to be peeled and cut into strips.
- Now you need to make sure that the cabbage sags. To do this, take a small saucepan, put your chopped cabbage into it, and add 0,5 cups of water. Cover with a lid and put on fire.
- 5 minutes after you put the cabbage, add pepper and onion to it.
- Now we add the rest of the ingredients of our dish: sugar, salt, sunflower oil, as well as chopped tomatoes, from which the skin was previously removed, and tomato paste. The latter can not be added, but with it the taste of your dish will turn out to be more tender.
- Stir the mixture, cover and simmer for half an hour, reducing the power of the fire.
- Remove the brine from the heat, add the vinegar, stir and cover.
With meat
Solyanka can also be made with meat. In this case, you will get a full-fledged second course, which you can enjoy in the winter.
For its preparation you will need:
- 1,5 kg of cabbage;
- 700 g carrots;
- 300 g onions;
- 100 g vegetable oil;
- 200 g of tomato paste;
- 350 g of meat;
- salt and seasonings to taste.
Preparing this dish is very simple:
- Rinse the cabbage thoroughly under running water and chop (just do not cut it too finely).
- The meat also needs to be washed and cut into small strips. Do not forget to remove all cores and films from them.
- Peel the carrots and carefully cut into rings.
- But the onion needs to be cut a little smaller – in half rings.
- Now the most important thing: 15 minutes, thoroughly fry the meat in a saucepan.
- Add to it all the other ingredients of your dish and simmer for another half an hour.
- After the dish is cooked, put it in jars and let it cool.
with eggplant
If you wish, you can diversify the menu and cook a hodgepodge with eggplant.
You will need:
- 1 kg eggplant;
- 1 sweet pepper;
- 200 g carrots;
- 300 g cabbage;
- 3-4 cloves of garlic;
- 50 g of sunflower oil;
- salt;
- sugar;
- 30 g vinegar (9%).
How to cook this dish:
- First you need to wash all the necessary vegetables, and you also need to remove the seeds from the pepper.
- To remove the bitter taste from eggplants, cut them into small cubes and sprinkle salt on top. In this form, they should stand for about half an hour. After the end of the procedure, they are washed again and are completely ready for use.
- Cut the pepper and cabbage into strips, but it is better to cut the carrots into rings.
- Now take a cauldron for stewing and pour oil into it. You also need to put all your vegetables there, adding salt and sugar to them. Don’t forget to mix it all up.
- First you need to put out your mixture for 40 minutes.
- After that, add the remaining ingredients to the cauldron and simmer for another 3 minutes. Salt is ready!
With cucumbers
If you love cucumbers, you can also add them to your hodgepodge.
To make this dish you will need:
- 1 kg of cucumbers;
- 1,5 kg of tomatoes;
- 0,5 kg of sweet pepper;
- 1,5 kg of cabbage;
- 1 kg of onions;
- 1 kg of carrots;
- 100 ml of vegetable oil;
- 100 ml of vinegar (6%);
- sugar;
- salt;
- seasonings (to taste).
How to cook:
- First you need to wash all your vegetables well.
- Cut each cucumber into cubes or strips, depending on personal preference.
- Also cut the cabbage into strips.
- Remove the skin from the tomatoes and cut into small cubes.
- Cut the pepper into strips, after cleaning it from seeds.
- Carrots can be finely grated on a coarse grater.
- Pour vegetable oil into the prepared pan or cauldron on the bottom. Chopped vegetables are placed in a container and mixed.
- Also do not forget to salt, sweeten and add spices.
- Simmer your mixture to a boil, and at the end be sure to add vinegar.
- Ready! Now pour the hodgepodge into jars and roll up.
With rice
This dish turns out to be very satisfying, and it is easy to prepare it.
You will need:
- 1 head of cabbage;
- 400 g of meat;
- 50 g of rice;
- 2 Art. l tomato paste;
- vegetable oil;
- salt.
What do we have to do:
- Wash the meat and cut into small pieces (you can cubes).
- Pour oil into the bottom of the cauldron, heat it up and add the meat there.
- Next, you need to chop the cabbage.
- Wait until the meat becomes ruddy and crispy, and add the cabbage. It takes a few minutes to simmer.
- Now you can add the rice and pasta and simmer until the cabbage is soft and the rice is cooked through. Solyanka is ready!
Mushroom in a slow cooker
Mushroom delicacy can be cooked quickly and easily. You can use champignon or any other mushroom, and you can even make a hodgepodge with pickled mushrooms (but more on that another time).
What ingredients will be needed:
- 60 g onions;
- 200 g cabbage;
- 100 grams of mushrooms
- 1 pickled cucumber;
- 20 ml of vegetable oil;
- salt;
- sugar;
- 100 ml of water;
- 0,5 tbsp. l. tomato paste.
How to cook:
- Peel the onion, rinse under running water and chop.
- Put it in a multicooker bowl, add oil and fry.
- Cut the mushrooms and cucumber, add them to the slow cooker.
- Chop the cabbage and put in a bowl with the rest of the products.
- In water, mix salt, sugar and tomato paste. Pour into multicooker.
- Simmer for an hour.

Here are some helpful tips for housewives:
- it is better to cut vegetables finely, but not too much;
- it is easy to remove the skin from tomatoes if you first scald them with boiling water, and then place them under cold water;
