Soft meats can be cooked at home. Not only fatty pork, but also lean beef can be easily made juicy and tender using a suitable marinade and baking method. For example, a meat dish stewed in a sleeve or in foil in its own juice with spices is distinguished by its amazing softness.
Marinated beef baked in the sleeve
Ingredients: – 700 g of beef in a piece; – 2 tbsp. salt; – 1 tsp Sahara; – 2 tbsp. lemon juice; – 2 bay leaves; – 4 allspice peas; – 1 tbsp. mustard; – 1,5 tbsp. vegetable oil; – 2 pinches of ground black pepper; – 4-5 cloves of garlic;
– 3-4 sprigs of herbs to taste (dill, parsley, cilantro, green onions).
Dissolve salt, sugar and lemon juice in 1 L of water in a bowl or container and stir until completely dissolved. Rinse the beef, remove the films and discard in a colander. Place it in the cooked marinade so that it completely covers the piece. Add peppercorns, bay leaves to the dishes, put the oppression and leave the meat at room temperature for 12 hours.
Remove the marinated beef fillet from the brine and pat dry with a paper towel. Lubricate it with mustard using a cooking brush, rub with vegetable oil and black pepper. Cut the meat in several places with a long, sharp knife, fill the cuts with garlic cloves cut into 2-3 parts and let sit for another half hour to soak in the aroma and taste of the seasonings.
Preheat oven to 180 ° C. Take a baking sleeve, pour 0,5 tbsp into it. water and add the prepared beef. Tie or secure the transparent bag with the attached clip, make 4–5 punctures in the upper part with a fork or toothpick, place the bundle on a baking sheet and place in the oven for 15–20 minutes until the liquid boils. Once this happens, turn the temperature down to 140–150 ° C and bake the dish for about 1,5 hours. Turn off the oven, but leave the baking sheet in it for 20 minutes without opening the door. Transfer the finished soft and juicy meat to a large plate, cut into thick slices and sprinkle with chopped herbs.
When roasting in the sleeve, the beef is slowly braised, making the lean meat very soft and tender. If you need a crispy crust, tear off the top of the sleeve 15 minutes before the end of cooking.
Ingredients: – 800 g of pork (ham); – 4 tablespoons soy sauce; – 1 tbsp. honey; – 2 tsp mustard seeds; – 0,5 tsp ground white pepper; – a pinch of chili powder; – vegetable oil.
Wash the ham, dry it, cut into slices and beat off a little. Pour mustard seeds, white pepper and chili into a large bowl, top with soy sauce, warmed honey and 2 tbsp. water. Stir the marinade thoroughly, dip the pork steaks in it and hold for 2 hours.
Turn on the oven, set the temperature to 200 ° C, place the meat in an ovenproof dish oiled with vegetable oil, cover with a sheet of foil and bake for 1 hour and 15 minutes. Then remove the silver paper, reduce heat to 170–180 ° C and place the dishes in the oven for another 15–20 minutes.
