Soba noodles (made from buckwheat flour) with vegetables and shiitake mushrooms
 

Ingredients: soba noodles 100 gr., Small carrots, half a red bell pepper, 4 shiitake mushrooms with legs, a clove of garlic, a small bunch of cilantro, a small bunch of green onions, 6-8 pods of young sweet peas, sesame or olive oil 2 tablespoons, soy sauce 4 tablespoons.

Preparation: Put the noodles in boiling water and cook for 10 minutes. Cut carrots, peppers, pea pods into thin “sticks”, thinly slice the mushrooms. Chop the garlic, onion and cilantro. Heat oil in a wok or deep skillet and sauté the garlic for a minute, stirring constantly. Add carrots, peppers, peas and mushrooms and cook for 2-3 minutes, stirring constantly. Pour in 2 tablespoons of soy sauce, 5 tablespoons of noodle broth, reduce heat, cover and let sit for 3 minutes.

Discard the noodles in a colander and rinse with cold water. Open the lid of the wok, add 2 more scoops of soy sauce, onion and cilantro and stir well. Place the noodles in the wok, stir again and simmer for 1-2 minutes. Garnish with a pinch of finely chopped green onions before serving.
