Method of preparation
Put 75 grams of sugar and a pinch of vanillin in the milk. Boil and leave to simmer over low heat. Beat 3 egg whites into a firm foam and gently spoon into milk until balls are formed. After the whites are swollen, turn over and cook for another 2 minutes. Remove with a slotted spoon on a sieve and drain, put on a dish. Beat 3 egg yolks with sugar (75 g) and 1 tablespoon of flour, cook over low heat, diluting with the milk mixture in which the snowballs were boiled. Boil. Refrigerate. Pour gently onto a dish with snowballs.
