The chicken today can rightfully bear the name of the queen of the Russian table. Chakhokhbili, satsivi, zrazy, cutlets are prepared from chicken fillet, it is pickled and saved, stuffed and baked. Chicken is often the basis for soups and purees. And gourmets even cook it with fruits and nuts, for example, making a smoked ham with pineapple.
Chicken meat has not just won the love and respect of the hostesses. It is surprisingly simple and quick to prepare, meat goes well with many herbs and vegetables, is an excellent dietary dish and an integral part of many weight loss systems. Chicken broth does help to restore the body’s strength, strengthening blood vessels and thinning the blood. Chicken leg is rich in iron, amino acids and vitamins; even after heat treatment, it does not lose its properties.
Smoked chicken legs with pineapple
To prepare this simple and tasty dish, you will need: – chicken leg – 4 pcs., – canned pineapples – 400 g, – feta cheese – 200 g, – olive oil – to taste, – mayonnaise – to taste, – parsley – 1 bunch, – olives to taste.
Meat processing
For smoked legs, you can use small chicken legs, but it is advisable to buy medium-sized chicken thighs for this recipe. Legs may also work, but then the dish will not be as satisfying, since the legs contain less meat.
Remove the skin from the legs and separate the meat from the bones. Rinse the meat under running water. You can smoke on the bone, but there is a risk that raw meat will remain around it.
By the way, pineapple can be used as a marinade, it perfectly softens meat.
Dip the cut meat in a marinade made from two chopped onions, a liter of mineral water and salt. The ham will be marinated for no more than an hour and a half. Then you need to take it out and let the brine drain. It is believed that meat should be salted before smoking. The chicken hardly needs it, its meat is naturally soft.
If you are the lucky owner of a real smokehouse, then fill it and hang the marinated hams on hooks for 20 minutes. This is quite enough if you removed the bones. If not, keep it for 30-40 minutes.
If there is no smokehouse, take a cast-iron pot, pour sawdust on the bottom, place a grate over them in size, and put the meat on it. Put the fixture on fire and close tightly with the lid with the weight. The meat will languish for at least half an hour; for the authenticity of the taste and aroma of smoked meats, you can pre-grease the chicken with liquid smoke. Although many housewives have this ingredient deservedly doubts.
Use canned pineapples to speed up the process. Drain the syrup and discard the fruit in a colander, pineapples should be dry when added to the dish.
Then cut the feta cheese or any other kind of salted cheese into large cubes. Combine all of these ingredients in a large bowl. Add mayonnaise or olive oil to taste.
Place the cooked meat on a large, flat plate in a heap. Use olives, black or green, for decoration. Greens also look advantageous, chop it finely and sprinkle the dish on top.
