Chicken Bouquet salad with mushrooms
To prepare a Smoked Chicken Salad with the beautiful name “Bouquet”, you need to take:
– 500 g of smoked chicken fillet; – 300 g of mushrooms; – 100 g of boiled beets; – 2 boiled carrots; – 200 g of walnuts; – 1 head of onion; – 1 clove of garlic; – 150 g of hard cheese; – 4 eggs , hard boiled; – 1 raw egg; – 70 ml of milk; – 1 tbsp. wheat flour; – 300 g of mayonnaise; – vegetable oil; – herbs; – pepper; – salt.
Gently wipe the champignons with a paper towel or napkin, chop finely and fry in vegetable oil along with peeled and chopped onions. The onions should become transparent, and the mushrooms should be golden. Season with salt, pepper and refrigerate. Cut the smoked chicken fillet, cheese and boiled carrots into small cubes. Chop the boiled eggs with a knife. Wrap the peeled walnuts in thick plastic and run over them with a rolling pin several times to crush them. Combine the prepared ingredients in a deep bowl, season with mayonnaise and stir. Place the salad in a glass bowl.
To decorate the dish, prepare omelette “roses” stuffed with beets. To do this, combine a raw egg, milk, flour, a pinch of salt and 1 teaspoon of vegetable oil. Whisk everything lightly and bake 2 omelette pancakes. Grate boiled beets. Pass the clove of garlic through a press and add to the grated beets, season with a little mayonnaise and mix well. Apply the prepared beetroot mass in a thin layer on the omelette pancakes and roll them up. Then cut into round slices about a centimeter thick. Spread the resulting “roses” on the surface of the salad and decorate with leaves and sprigs of aromatic herbs.
