Slaughter Days

They begin in the Salamanca town of Guijuelo, the XXX Days of the Typical Slaughter.

In the framework of the popular winter festival, the Association of Friends of Slaughter with the close collaboration of the municipal council, the Meat Industry Association and the regulatory body of the Appellation of origin, call to participate in the celebrations to all those locals and visitors who want to know the tradition in the elaboration of the sausage, after the act of sacrifice of the animal.

There are already thirty editions, which reflect a very important background of this Castilian tradition.

Many months have passed since the animal has been fattened, and the time has come to slaughter it. What we know today as mass consumer products once represented survival.

The celebrations

Over the course of 22 days, the Pig will be the true protagonist of the slaughterers’ claws, where acts and exhibitions full of tradition and some blood will be accompanied by popular dances and folklore.

There will be no shortage of acts and awards either, within the framework of the Institutional Matanza, will proceed to honor illustrious figures of the art of Matanza, in the figure of 18 former Matanceros de Honor, in a solemn act within the Plaza de Castilla square and Leon. 

Among the famous honorees are a very diverse cast of professionals and distinguished guests of the event such as the chef Sergio Fernandez, … hit it up …, the cyclist Marino Lejarreta, The humorist William Summers, journalist Julio Cesar Iglesias, etc …

During the weekends of celebrations they extend to the general public and the act of The Arrieros it is a clear exposition.

From the town of Fuenterroble de Salvatierra, the members of La Association of Friends of the Camino de Santiago (Acasan), transporting in one of their carts the Pig that will be sacrificed in one of the Matanzas acts.

Before the closing of the celebrations, a very special act will take place and with a clear Renaissance feeling, paying tribute to the Castilian layer, as a universal garment and still in use by many of our illustrious in different national and international Galas and Events.

The different weekends will have between their days the traditional slaughter and appointment of Matanzas of honor, this award falling on several characters of all known for this edition, Ivan Helguera, Pedro Ruiz or Emilio Jose among others they will participate in these acts and as an international “fusion” of cultures, we will be able to see how an authentic Teuton, Bernardo Shuster It is also converted into the art of the Spanish slaughter.
