Simple homemade beer cookies (sweet and salty)

Homemade beer cookies are crispy, crumbly and literally melt in your mouth. You can cook two types: sweet – with cinnamon and sugar for tea, and salty – with cumin and salt for beer. The second option is a great substitute for crackers or other beer snacks. During the baking process, the ethyl alcohol will completely evaporate and the cookies will turn out to be non-alcoholic, it is safe to give even to children. Total time costs (with test exposure) – 60 minutes.

This recipe uses beer as a leavening agent – the carbon dioxide in the drink makes the dough fluffy, resulting in a soft and airy cookie, so classic baking powder, such as baking soda and vinegar, is not required.

Any pale filtered beer will do. Dark gives a slight bitterness, and unfiltered – an obsessive bread note, these varieties can only be taken for salty cookies. Butter can be replaced with margarine, there will be no difference in taste.

Most importantly, the beer must be highly carbonated, otherwise the dough will not loosen well and the cookies will turn out hard. It is better to open the beer and pour it into a glass immediately before adding it to the flour so that it does not run out of steam.

Ingredients:

  • wheat flour (highest grade) – 3 cups;
  • margarine or butter – 200 g;
  • light filtered beer – half a glass (100 ml);
  • chicken egg – 1 piece;
  • for sweet cookies:
  • sugar – 3 tablespoons;
  • cinnamon – 0,5 tablespoons;
  • coconut flakes – to taste;
  • for salted cookies:
  • cumin – 2 teaspoons;
  • salt – 1-2 pinches;
  • sesame – to taste.

Preparation

1. Grate very cold butter (margarine) on a coarse grater, mix in a bowl with sifted flour, then mix until a homogeneous consistency is obtained.

2. Beat the chicken egg into the mixture and pour in the beer. Knead the dough for at least 5 minutes until it stops sticking to your hands.

3. Wrap the finished dough in a plastic bag and leave in the refrigerator for 30 minutes.

4. Mix sugar and cinnamon or cumin with salt. From one dough, you can cook two options for cookies at once: salty and sweet, just bake them separately so that the flavors do not interrupt each other.

5. Sprinkle the table with flour and roll out the dough to a thickness of 0,5 cm. Make cookie blanks of any shape, for example, round ones using a glass or an asterisk (heart) with special shapes. Salted biscuits as a snack for beer are usually baked with thin sticks, but this is not necessary.

6. Line a baking sheet with parchment or simply sprinkle with flour. Dip each piece on one side in cinnamon and sugar or cumin and salt, then place on a baking sheet with a clean side so that the powder is on top. The blanks should not touch each other.

7. Bake cookies on beer for 20-25 minutes in the oven at 200 ° C until cooked. Then take out and refrigerate before serving. Salty cookies can be sprinkled with sesame seeds, sweet ones with coconut flakes.
