Sometimes you really want to eat some delicious, homemade cakes, but you absolutely have neither the strength nor the time to tackle complex dessert recipes. Simple and quick cookie recipes will come to the rescue. Soft and crunchy, shortbread and oatmeal, cookies are so different, but they are all amazingly tasty.
Coconut macaroons with chocolate chunks
To make these simple and quick cookies, you will need: – 1 cup of chopped and toasted almonds. – 2 cups wheat flour; – 1 teaspoon baking powder; – ½ teaspoon of salt; – 19 tablespoons unsalted butter; – 1 ½ cups brown cane sugar; – 2 chicken eggs; – 1 teaspoon of vanilla extract; – 1 cup of chocolate “drops” for the cake; – 2 cups of coconut flakes.
If you do not have special chocolate “drops”, replace them with an ordinary bar of dark chocolate, breaking it into pieces
Preheat oven to 175 ° C. Line a baking sheet with baking parchment. Combine flour, salt and baking powder in one bowl. In a mixer bowl, on medium speed, beat the butter and sugar into a light to fluffy mixture. Add eggs and vanilla extract. While continuing to beat, gradually add flour in a thin stream, then add coconut, almonds and chocolate “drops”. Using a tablespoon, place the dough on the lined baking sheet, 2 centimeters apart. Bake for 12-15 minutes. Refrigerate and serve the cookies.
To prepare a simple shortbread cookie according to the classic recipe, you will need: – 1/3 cup granulated sugar; 1/3 cup brown cane sugar – a pinch of salt; – 1 tablespoon of vegetable oil; – 2 glasses of wheat flour; – 1 tablespoon lemon zest.
You can add orange zest, candied fruit, vanilla extract, cocoa powder to such cookies
Preheat oven to 170 ° C. Using a mixer, beat the butter, salt and sugar until fluffy. Add lemon zest. Reduce speed and gradually add sifted flour. Spread the resulting dough over the bottom of the baking sheet, flatten and bake in a preheated oven. Bake in the preheated oven for 35 minutes, until the cookies are golden brown. Refrigerate and cut the dough into rectangular cookies. You can sprinkle them with icing sugar or dip them in chocolate icing.
If you have a little more time, make a curly cookie. Take: – 2 ½ cups wheat flour; – 1 teaspoon of ground ginger; – 1 teaspoon of ground cinnamon; – ½ teaspoon ground nutmeg; – 1 teaspoon baking powder; – 1/8 teaspoon of salt; – 16 tablespoons of softened unsalted butter; – 1 cup brown cane sugar.
Sift flour, ground ginger and cinnamon, nutmeg and salt, baking powder and salt into a bowl. Whisk in softened butter, if you want fluffier cookies, replace butter with margarine. Add sugar gradually, then add the flour and spice mixture. Place the dough on a work surface and knead well. Roll into a ball, remove with cling film and refrigerate for 2-3 hours. Preheat oven to 200 ° C. Grease a baking sheet with oil. Roll out the dough into a ½ centimeter thick layer. Cut out curly cookies using special cutters or a simple shot glass. Place on a baking sheet and bake for about 10 minutes. Let cool and serve.
