Shrimp fried in white wine is a Portuguese version of the dish, in which the taste and aroma of seafood is complemented by garlic, lemon juice and spices. The finished version can be an excellent snack for dry white and rosé wines, as well as light beer.
Any shrimp will do: from small to tiger. At the same time, it is not necessary to clean them, you can fry them as is, then the aroma will be even richer. A well-established method is when almost all shrimp are cleaned, leaving only the tail, but 2-3 unpeeled carcasses are added to the pan, which enhance the smell of seafood.
It is very important to choose the right wine. Suitable white, necessarily dry wines of medium and high acidity. For example, Chardonnay, Riesling, Gewürztraminer and others. The drink should be natural, medium price segment. Cheap wines can spoil the taste of shrimp with chemical additives, and it also makes no sense to overpay for exclusive brands, because there will be almost nothing left of the wine itself in the finished sauce.
In addition to black pepper with shrimp, the wine combines: basil, oregano, cloves, ginger and rosemary. But here it is important not to overdo it with spices, choosing no more than two at a time, and preferably one spice in general. Butter softens the taste and emphasizes the aroma.

Ingredients:
- Shrimp – 500 g;
- wine – 200 ml;
- Garlic – 2 cloves;
- olive oil – 2 tablespoons;
- lemon juice – from half the fruit;
- butter – 15-20 g (optional);
- fresh herbs – to taste (optional);
- salt, pepper, other seasonings and spices – to taste.
Technology of preparation
1. Defrost shrimp. Peel the garlic and cut into small pieces, do not crush.
2. Heat a frying pan with vegetable oil, add garlic. Fry over medium heat for 1-2 minutes, stirring occasionally. The oil should be soaked in garlic.
3. Put the shrimp in one layer, it is desirable that the carcasses do not touch each other. Fry on both sides until the liquid has completely evaporated and the color changes (the shrimp pulp will have a slight red tint).
4. Add salt, pepper, other seasonings and spices. Pour in wine and lemon juice, mix lightly, cover the pan with a lid.
5. Stew the shrimp in wine for 8-10 minutes until the liquid has evaporated. If desired, add chopped herbs, cover, remove from heat and leave for 1-2 minutes.
6. Serve warm prawns in wine sauce, they go well with white bread and fresh vegetables.
