Although shrimp pizza is not one of the classic Italian dishes, its recipes, of which there are many, are kept in strict national traditions. The secret of making real pizza, first of all, is hidden in the cake. It is she who gives the pizza texture, unites flavors. There are some subtleties in the preparation of various fillings containing this delicate seafood.
In order to make the dough, which is enough for baking 4 pizzas, each about 12 centimeters in diameter, you will need: – 600 ml of warm water; – 1 kg of wheat flour; – 25 g of dry instant yeast; – 6 tbsp. tablespoons of olive oil; – 1 and ½ tbsp. tablespoons of finely ground salt; – 2 teaspoons of sugar.
The classic pizza base comes in two flavors – thick, Neapolitan, and thin, crispy, Roman. They are also called Aldo Pizza and Bassa Pizza in Italian cookbooks.
Pour warm water into a bowl, the temperature of which should be at least 25 and not higher than 32 ° C. Sprinkle the yeast over the surface, let it swell, stir well. Sift flour with a slide onto a work surface, make a depression in the center, pour diluted yeast into the formed “crater” and knead the dough. Knead it for 10 to 15 minutes, until the dough is smooth and elastic.
Grease a bowl with olive oil, put the dough in it, turn it several times so that the entire surface is oily. Cover the bowl with cling film and set aside for 4-5 hours. Place the dough on a work surface, beating it well against the table to “knock out” any air bubbles. Divide the dough into 2 or 4 pieces and let it rest for 5-7 minutes. Roll the pieces into tortillas, stretch them gently with your hands, form low sides. Now you can put the filling on the base.
Pizzas are divided into “red” cooked with tomato sauce, and “white” baked without it. Recently, recipes for “green” pizzas have appeared, with the famous pesto sauce in the filling.
Recipe for “red” pizza with shrimps
For this dish you will need: – ¼ a cup of olive oil; – 500 g of peeled raw shrimp; – 5 cloves of garlic; – 1 head of peeled and thinly chopped onions; – 1 glass of dry white wine; – 2 cups cherry tomatoes; – ¼ teaspoons of dried oregano; – 2 cups grated mozzarella cheese; – XNUMX/XNUMX cup fresh basil, chopped.
Preheat oven to 200 ° C. Prepare a special pizza stone or bake the dish in a thick, low-sided skillet. Heat one tablespoon of olive oil in a skillet over medium heat. Sprinkle the shrimps with salt and pepper, fry for a minute on each side. Place on a plate. Pour 2 tablespoons of vegetable oil into the pan and fry the onion until transparent, add the garlic and fry for another minute. Pour in wine, put tomatoes and oregano, simmer for 10-15 minutes, stirring occasionally. Brush the remaining butter on the pizza cake. Place half of the mozzarella on the base, spread the tomatoes on top, add the shrimp and add the remaining cheese. Bake the pizza for 10-12 minutes. Serve garnished with fresh basil.
