According to GOST 52121-2003, raw chicken eggs can be stored at an average temperature of at least 20 ° C for 6 months. If the temperature in the storage room is stable at an average of 6 ° C, the shelf life is extended to 2 years. An important condition: eggs should be stored in rooms with good ventilation, where sharp temperature fluctuations are excluded.
It is important to store eggs at a relative humidity of 86%, otherwise they will deteriorate much earlier than expected.
In the refrigerator, the shelf life is 3-4 weeks.
If you are unsure of the correct storage of your eggs and want to check to see if they have deteriorated, take a close look at the egg white. If it has lost even a little transparency or changed color, the product is spoiled. If you notice even the slightest unusual smell, the egg will not lie down for consumption.
There is another way to test an egg for freshness without breaking it. Dip it in a bowl of water and watch. The egg on the bottom is fresh. If it has risen to the middle of the container, the product is not the first freshness, but it is suitable for consumption. A floating egg should be discarded immediately. Such a test is based on a chemical reaction inside the shell: gases are formed in the stale protein, these are waste products of pathogenic bacteria.
You can extend the shelf life of an egg by boiling it. But even boiled eggs have a strictly limited shelf life.
