Shark meat: recipe for cooking. Video
Shark meat can often be found on the table among residents of Asia, Australia, Africa. It is especially popular in Japan, and many different dishes are made from it in Europe. It is distinguished by a peculiar taste, rich in easily digestible proteins and useful microelements. Well, shark meat can be cooked in a variety of ways.
Shark and pineapple stew
Ingredients: – 0,5 kg of herring or blue shark fillet; – 150 ml of pineapple juice; – 150 ml of cream; – 1 pineapple; – 1 tbsp. a spoonful of curry; – 3 tbsp. tablespoons of butter; – 120 ml of water or fish broth; – 1 teaspoon of starch; – salt and black pepper to taste.
Wash the shark fillet, cut into small cubes, put in a glass or ceramic dish, cover with pineapple juice and leave for half an hour. Peel the pineapple, cut a hard core out of it, and cut the flesh into cubes.
Melt the butter in a saucepan and simmer the pineapple pieces in it for 5 minutes. Then add water or broth, cream and curry. Mix everything and simmer for a couple of minutes. Add the starch diluted in the juice to the saucepan, and when the sauce thickens a little, put the shark fillet pieces. Season with salt, pepper and simmer over low heat for 10 minutes. Serve the finished stew with boiled brown rice.
In order for shark meat to lose its characteristic bitterness and unpleasant smell of ammonia, it should be soaked in water with a small amount of lemon juice. The water needs to be changed periodically
Ingredients: – 3 kg of katran meat; – 2 grapefruits; – 7 pcs. lime; – salt and black peppercorns.
Skin the shark if necessary, then wash and cut into large pieces. Put in a saucepan, salt, add allspice. Pour the lime and grapefruit juice marinade so that the marinade completely covers the shark meat. After 3 hours, cook the meat on a wire rack until tender.
Ingredients: – 4 pcs. dried shark fins; – onion head; – 250 g of crab meat; – 1 root of fresh ginger; – a pinch of dried barberry; – 2 liters of chicken broth; – green onions; – pepper and salt.
Pour boiling water over the fins, add a little lemon juice and soak for at least 10 hours, changing the water periodically. After the allotted time, wash the fins, put them in a saucepan along with the peeled onion and ginger, cover with water and boil for 6 hours over low heat.
Then remove the fins and cool. Separate the cartilages from them, which are then dipped in boiling chicken broth. Add salt to taste and barberry. After 15 minutes, put the chopped crab meat in the soup, cook for 5 minutes and remove from heat. Let it brew for a while, pour into bowls and sprinkle with green onions.
Ingredients: – 2 shark steaks; – a mixture of peppers; – 1 lemon; – bread crumbs; – vegetable oil;
From the steaks, remove the skin and central cartilage to make 4 slices. Sprinkle each with a mixture of peppers and lemon juice. After half an hour, roll the shark meat in breadcrumbs and fry until golden brown in vegetable oil. Serve with fresh vegetables.
