Seven mistakes that can lead to salmonella infection

Remember that our body can handle a few bacteria. Infection occurs when we introduce more microorganisms into our digestive tract. By storing eggs outside the refrigerator, we increase the risk that bacteria will multiply on them to dangerous levels.

Salmonella and egg preparation

The second mistake is improper handling of eggs when cooking. If you prepare scrambled eggs and break the shells, and then wipe your hands on a towel, you increase the risk of infection. The salmonella bacteria that were on the eggshells remain on your skin and can be passed on to other foods.

According to the World Health Organization, as much as 69 percent. gastrointestinal infections result from not washing your hands. Therefore, after contact with eggs, we should scrub our hands with soap for at least 14 seconds!

Washing eggs before use – when is it better not to?

Another mistake concerns home baking. If you are preparing a cake that will spend about an hour in the oven, you do not need to wash the eggs under running tap water before breaking the eggs into the mass. Salmonella dies at a temperature of around 70 degrees Celsius – therefore, a stay in a very hot oven for an hour will surely eliminate the bacteria.

On the other hand, tap water, the temperature of which usually does not exceed 40 degrees Celsius, can disperse with the bacteria onto other food items or the dishwasher. Under unfavorable conditions, bacteria may multiply. Consequently, if the eggs are subjected to a long heat treatment, it is best not to wash them. It is enough to stick them into the mass, throw the shells immediately into the bin with waste (not to the sink!), And wash your hands thoroughly with warm, soapy water.

Salmonella – when to scald the eggshells?

The next mistake is related to the preparation of creams or sauces based on raw yolks. Examples include kogel-mogel, zabajone and mayonnaise. If you stick the yolks into the mass without scalding the shells first, you are at risk. Salmonella sticks that were on the eggshells can get into the cream. That is why, after removing from the refrigerator, the eggs should be put in boiling water for a few minutes or poured over with boiling water, and then the shells should be broken.

Lack of hygiene promotes salmonella

You should also remember about the rules of hygiene in the kitchen. Dishes, accessories and surfaces that come into contact with raw eggs should be thoroughly washed with hot soapy water. Also, do not use the same utensils or cutlery that have been in contact with raw eggs.

Although salmonella poisoning is associated mainly with raw eggs used in the production of ice cream, creams or mayonnaise, bacteria can also be found in meat (including poultry and fish) and its products (in tartare, fish pastes, jellies, pates) and in cheeses and even in fruit juices. It is worth having a separate meat cutting board, preferably a plastic one. In addition, you should remember that meat and eggs should remain in the refrigerator permanently and should not come into contact with other food.
