After that, put the grains in a fine sieve and rinse thoroughly in running water. When the excess liquid drains, put the prepared sesame seeds in a dry, thick-walled pan (cast iron) in one layer.
How to cook fried sesame seeds properly
It is necessary to fry sesame seeds over low heat, constantly stirring the contents of the pan with a wooden spatula. So the grains will not burn and will harden evenly. When they begin to bounce in the pan, the heat treatment should be stopped. Correctly roasted sesame seeds acquire a brown hue and an enhanced sweet-spicy nutty flavor. In addition, sesame becomes brittle, so it will be easy to grind for adding to homemade pastries.
