Semolina pie: a delicious alternative. Video
Semolina pie is a delicious and quick version of a homemade dessert. It can be soaked in syrup, added with cream, chocolate, jam or fruit. Semolina gives the dough an unusual structure and airiness, but only if the cooking technology is followed.
Try making an airy pie without butter or flour. The dessert baked according to this recipe turns out to be very tender and light.
You will need: – 1 glass of semolina; – 1 glass of sugar; – 4 eggs; – a pinch of vanillin.
For syrup: – 0,5 cups of sugar; – 0,5 cups of cream.
Separate the yolks from the whites. Mash the yolks with sugar and vanilla; for speed of the process, you can use a mixer. Beat the whites into a very strong foam – stable peaks should form on it. In the yolk mass, alternately spread the semolina and whipped whites, gently stirring the dough with a spoon.
Grease a refractory round shape with butter and pour the dough into it. Preheat oven to 200C and place the cake in it. Bake until golden brown. Correctly kneaded dough should rise evenly – this is a guarantee that the dessert will turn out fluffy.
Combine the cream and sugar in a saucepan. While stirring, bring the mixture to a boil and dissolve the sugar. Saturate the freshly baked pie with hot syrup and put the dessert in the oven for a couple of minutes to absorb the cream. Remove the cake and let it cool right in the pan. The finished dessert can be garnished with fresh or canned fruits.
If you prefer a lighter syrup, replace the cream with milk
Semolina cake with chocolate and lemon zest
This cake has a pleasant sour taste, provided by lemon juice and zest added to the dough.
You will need: – 4 eggs; – 0,75 cups of semolina; – 0,25 cups of wheat flour; – 2 tablespoons of butter; – 1 glass of sugar; – 0,5 lemon; – 100 g of white chocolate without additives; – 2 tablespoons of cream.
Squeeze the juice from half a lemon, slice the zest thinly and scald with boiling water. Combine semolina and sifted wheat flour. Mash the yolks with sugar until white, add semolina with flour, add zest and lemon juice. Mix everything well. Whisk the whites and add portions to the semolina. Stir gently so that the whites do not fall off.
You can replace half of the lemon in the recipe with a whole small orange. Choose a sweet and sour fruit for a richer pie flavor
Place the dough in a greased baking dish. Bake semolina pie until golden brown. Remove it from the mold and cool slightly on the board. Melt the white chocolate and cream in a saucepan, stir well. Pour the hot chocolate icing over the finished cake and let the coating harden. Then cut the dessert into pieces and serve.
