Seabass fish in the oven: recipe. Video

The sea bass fish belongs to the sea bass family. She has tender meat and few bones. In cooking, sea bass is considered a versatile fish that tastes equally well boiled, fried, and baked. Oven-baked seabass stuffed with pineapples, bell peppers and leeks is very good.

You will need: – 2 carcasses of medium sized sea bass fish (about 30 cm in length); – 2 stalks of leeks; – 1 small can of pineapple in syrup (234 g); – 1 medium bell pepper; – 3 tablespoons of olive oil; – juice of half a lemon; – 1/2 teaspoon of ground ginger; – 1/4 teaspoon of red hot pepper; – salt to taste.

Stage 1. Preparation and marinating of the sea bass

Scale the fish and cut off the fins. Make a longitudinal incision in the abdomen and carefully remove the insides. The fish will cook headlong, so remove the gills. Rinse the carcass with cold water and pat dry with a paper towel.

Try not to damage the gallbladder when removing the insides, otherwise bile will spill and the finished dish will taste bitter. If it does rupture, immediately rinse the belly of the fish with plenty of cold water.

Combine olive oil, lemon juice, coarse salt, ground ginger and red hot pepper in a bowl. Make several shallow transverse cuts on the skin of the sea bass with a sharp knife. Rub the marinade inside and outside the fish. Let sit at room temperature for 20 minutes.

Wash the vegetables. Cut the leeks (only the white part) into half rings. Remove the stalk, seeds and partitions from the bell pepper. Cut into small cubes. Drain the pineapples and also cut into cubes. Combine vegetables and pineapples in a bowl, lightly salt.

Cut a piece of foil to the size of the seabass and place the fish on top of it. Fill the belly with the vegetable mixture. Put more vegetables, it’s okay if some of them lie on the foil next to the belly. Wrap the fish hermetically in foil to keep it from drying out in the oven.

A large amount of juice will be produced when the fish is cooked. To prevent it from leaking out, it is best to use two layers of foil.

Stage 3. Baking the sea bass

Preheat oven to 180 ° C. Place the wire rack in the middle position. Place the fish in foil in a heat-resistant dish. If some of the juice does leak out during baking, it will remain inside the dishes, and will not burn to the bottom of the oven. Place the dish on the wire rack. Bake the sea bass for 25-30 minutes.

Remove the cooked fish from the oven, carefully open the foil and let it rest for a couple of minutes. Place on a dish directly in the foil and serve with lemon and fresh herbs. Usually a side dish for stuffed sea bass is not required – everything you need is already inside. But if you want this tasty dish to be more satisfying, serve something neutral with it. Steamed rice is ideal.
