On the May holidays, many Chelyabinsk residents went to the forest for barbecue. And after the May holidays, they felt the consequences of eating heavy fatty foods. And just then the Science Daily magazine published the results of the latest research: vegetarians live three and a half years longer than meat eaters.
Woman’s Day decided to find out what approach to nutrition is chosen by Chelyabinsk residents. Make your choice and you. Woman’s Day gathered the opinions of Chelyabinsk eaters – to give up meat or not. From everyone – according to a delicious recipe.
Marina Gulyaeva, 49 years old, head of the Ananda yoga center:
“Nine years ago I started doing yoga and felt that I no longer want meat. I began to feel bad when we eat it. I began to listen to myself and eat what my body needs. There are many things that attracts me to vegetarianism. This is the ease of digesting food – I had gastritis – and the ease of cooking. I mainly eat cereals, the simplest vegetable soups, puree soups, dairy products. I eat butter with spoons. However, one of my all-time favorites is the Indian mix right.
Recipe: Wright’s Mix
Take hard vegetables – cucumber, radish, tomato, pepper, lots of herbs, green onions. Chop as finely as possible, like on a grater. Pour over yogurt and add the Indian spice masala. “
Alexander Kazantsev, creative director of the Formula Vkusa culinary school:
“I think Russians have a love for meat. Especially in those who were born in the Urals. In our harsh climate, there is no way without meat. It is in hot India that you can eat fruits and not feel the desire to eat something meaty. In the cold, you want meat. Well, the most important thing in meat for me is festive feasts that gather around meat dishes. These are birthdays, New Years, picnics with barbecue, and barbecue parties. Now our company is preparing a five-day barbecue marathon, where all types of meat will be cooked. I am pleased to cook meat dishes for friends, wait while it languishes in the oven, and then treat them to guests. One of these recipes is our family recipe, I will tell you about it.
Recipe: Merchant Meat
Cover a piece of pork with salted milk mushrooms and onions. Wrap in foil and place in the oven for 20 minutes. After that, take out, unrolling the foil, sprinkle with grated cheese and put back in the oven. All the ingredients are delicious and go well with each other. “
Kristina Revenko, foreign economic activity manager:
“My attitude to vegetarianism is extremely positive because of my love for animals. For a long time I wanted to switch to giving up meat, but refused only in January 2014. A little later she gave up fish. I practiced veganism for six months, but it didn’t work out for us. Since I have gastritis, after giving up meat and fish, and, accordingly, many other junk food, the stomach began to bother much less often. In general, the craving for fatty foods has decreased, even your favorite fried potatoes look less appetizing than before.
Recipe: Pancakes Without Eggs
Milk, soda, flour, sunflower oil – mix everything and bake in a preheated pan. I did everything by eye, I do not measure by grams and so on, I am guided by the volume of milk or water. I also added a banana instead of an egg, it turns out delicious. “
Constantin Marcion, sales assistant in a jewelry salon:
“Three years ago I switched to vegetarianism. I was curious to try what it felt like. I have heard many reviews from vegetarians about how it improves health, how you start to feel more invigorated and lighter. I did not eat animal food from February 12 to July 4, 2013, but during this time I did not feel anything. Didn’t even lose weight! And then I went on a trip to Central Asia, and it was simply impossible to find vegetarian food there. So I started eating meat again. In Kyrgyzstan, I even ate a dog dish. The downside of vegetarianism for me was that you feel very uncomfortable visiting. The hospitable hosts have prepared a whole table, but you cannot taste a single dish.
Vegetarian Recipe: Lentil Soup
You need chopped lentils, celery, ginger, potatoes, onions, carrots. Soak lentils, then boil, put sautéed onions with carrots, potatoes and finely chopped celery, ginger there. Add spices at the end. When cooked, you can sprinkle with herbs.
Kyrgyz recipe: sharpo
Take the lamb brisket and cut it into pieces along the joint line. We cut off fat from it. Put the pieces of fat in a non-stick frying pan and melt it. Fry the brisket in melted fat. Chop the tomato and onion. Fry all together for 5-10 minutes, stirring occasionally. Add water during cooking. Then toss in the diced potatoes. And we cook it all over low heat. Salt, add a bunch of herbs, bay leaf and black peppercorns. We bring a few minutes to readiness. Serve hot. “
Alexander Schegolev, bodybuilder:
“I used to think that I could never give up meat. I ate meat food five times a day and could not imagine life without meat. But now I just have an unpleasant sensation at the smell and sight. Now in my diet there are mainly carbohydrates: rice, buckwheat, pasta, oatmeal, potatoes, fruits, vegetables. I don’t eat a lot of protein – I eat mainly cottage cheese, other dairy products, cheese, nuts, legumes, protein (a sports supplement). Sometimes I eat soy products, but not much. Since the training is hard, I include vitamins and supplements for the ligaments. On a vegetarian diet, I began to feel better: there is no heaviness that was from meat, digestion has become better, I feel an increase in endurance, clarity of thinking. In the fitness center where I work, about 15 people have already become vegetarians.
Recipe: sabji – ragout in Indian
Cut the carrots into cubes, put on the bottom of the pan, on top – chopped cabbage (half a cabbage), on top of the cabbage – chopped potatoes (five potatoes). If you are using a pumpkin, you need to put it on the very top. You can also add cauliflower, asparagus, and Brussels sprouts. Add water and bay leaves and simmer over low heat for 15–20 minutes. Do not stir. Then remove from heat, add green peas, oil and spices (coriander, black pepper, turmeric, ginger, asfetida), Adyghe cheese or homemade paneer cheese and sour cream, mix and leave for 5 minutes.
Yuri Bobkov, artistic director of the Mannequin Theater:
“I believe that a person should eat everything: vegetables and meat. I am calm about what I eat, without fanaticism. Recently I lost 16 kilograms without doing anything special for this. I just felt that I was uncomfortable in this weight, and began to want to eat a little less. I also quit smoking – just tired. You don’t need to step over yourself, you just need to change your psychological attitude. “
Recipe: Quick Meat
If you need to meet guests in 10 minutes, and you have a piece of real veal tenderloin at home, pepper and salt the meat and cut into cubes about 4 by 4 centimeters. Add your favorite seasoning and fry them in a nonstick skillet for literally 2 minutes until crusty. The crust will prevent the juice from flowing out, and the meat will be soft and juicy. “
Inna Gluz-Shirokova, psychologist:
“A year and a half ago I switched to vegetarianism after I realized the difference in well-being after meat and vegetarian food. I realized that meat gives a feeling of aggression. However, I did not deliberately refuse it – just over time, meat food began to make me disgusted and nauseous. Now I feel better than I did before vegetarianism.
Recipe: pilaf with nuts
Chop one onion and one carrot and fry in ghee. Add a handful of almonds and cashews and fry until golden brown. Fry a glass of dry rice, add two glasses of boiling water, salt, pepper, turmeric. Cook for 20 minutes. “
Anastasia Surtseva, head of the financial and economic department:
“My husband loves meat very much, so I cook it in all kinds: bake, stew, fry, cook on fire, grill. I participate in culinary marathons from the Formula Vkusa school.
Recipe: Beef with Prunes
Stuff the beef with prunes and put on low heat in the oven with a temperature of 110 degrees, season with rosemary and bay leaves. “
Liza Govorukhina, web designer:
“I am not a vegetarian, I adhere to different principles of nutrition. Today I don’t eat meat for two years, cooked food – once a day every other day, a lot of fresh herbs and fruits. In summer, only fruit. This can be simply called “healthy eating”. I can eat whatever I want, when I want and in any quantity, but I know what foods have what effect on the body, and my diet gradually changes with the cleansing of the body. I know that there is a division in nutrition into vegetarianism, veganism, raw food diet, I tried all these principles of nutrition on myself and realized that for each person different nutrition will be correct at different periods of life. My worldview changed completely with the change in nutrition, there was a desire to live far outside the city, closer to nature, in the mountains, in the forest. The state of health and health has improved. Before, I had to have a snack every 2-3 hours, otherwise my head would start to hurt, the doctors could not explain why. Now I can not eat at all for 5 days. The effect of cooked food on the body is very well felt – after eating it, you feel heaviness, you want to sleep, and in the morning you have a disgusting taste in your mouth.
Recipe: Banana Nut and Raisin Cupcake
Make banana puree by mashing the bananas with a fork. Add sugar, pour in orange juice, add vegetable oil, raisins, walnuts. We take two glasses of flour, you can mix rye and wheat. We mix it with baking soda and – if we cook with water – with citric acid. We mix everything, put it in a silicone mold – and in the oven. “
Sergey Smirnov, journalist:
“I don’t wonder if meat is healthy or harmful – I just love to cook it and love to eat. I am a hunter and I love game very much. Although many do not like her because of the specific smell, especially women. And this year I am going to start breeding rabbits so that there is always meat in the house. The corral is already ready for them. Historically, it is in our minds that meat is a holiday. It was not always possible to eat it when you wanted to. Now meat is available and we can eat it often. I think that the most delicious meat is simply cooked, you don’t need to add anything except salt and pepper. This is how our ancestors and even Catherine the Great ate.
Recipe: Pork Stew
Take a piece of pork, make notches on it, put the pan on high heat and keep for two minutes until a crust forms. Then cover and simmer in its own juice. And there is it slowly – in the army I was taught to eat quickly, and I have to stop myself in order to enjoy the process. “
“I’ve been a vegetarian for about 10 years. Vegetarianism gave me a feeling of lightness, flexibility. Digestion improved, body odor changed, and a feeling of cleanliness appeared. With vegetarianism, a lot has manifested itself in my life – a new circle of friends, yoga, philosophy and the ease of accepting people with different outlooks on life.
Recipe: Banana Muffins
Take bananas, mash them with a fork or in a blender. In a separate plate, mix and also knead butter and sugar, 1 teaspoon of baking soda, a pinch of vanilla sugar, 2 tablespoons of homemade yogurt. Mix with mashed bananas and add flour until a very thick sour cream consistency. You can bake in a silicone mold or disposable paper tins at 180 degrees until golden brown. Ready-made muffins can be garnished with cherries or fresh mint leaves. “
Arsen Karapetyan, host, showman, participant of the Comedy Battle show:
“I love meat – tasty, juicy. I believe that people are predators, so meat should be eaten. Besides, I train in the gym, and I need meat. I don’t know of a single athlete who would gain muscle mass without meat.
Recipe: French Meat
I think meat and cheese are perfect. Take a pork neck, beat it off, sprinkle with salt and pepper and place on a greased baking sheet. Brush with mayonnaise on top. Chop a tomato, rub edam or gouda cheese. Place the tomato on top of the meat, sprinkle with cheese on top. Bake the meat for about 40 minutes in the oven at 220 degrees. “
Anna Rudykh, chemical engineer:
“Vegan experience – two years. Vegetarianism gave me health, mental and physical. Ease appeared, digestive problems disappeared, the condition of hair and nails improved, became calmer, irritability went away.
Recipe: lasagna with spinach and Adyghe cheese
Take lasagna sheets, boil for 3-6 minutes. Heat the oven to 200 degrees, put on a lasagna sheet, brush with tomato sauce. Then put chopped spinach, Adyghe cheese, lasagna leaf, grease on top with tomato sauce and put in the oven for 20 minutes. “
Olga Kalinnikova, managing director:
“I do yoga, and although most yogis are vegetarians, I never planned to give up meat. Meat helps me stay energized and fit. It contains essential trace elements that cannot be obtained from plants. And it’s not with our ecology to experiment on ourselves.
Recipe: Pork with Pineapple
Cut pork and fresh pineapple into slices, carrots and onions into long strips. Season with ginger, add salt, pepper and fry over high heat. “
