The division into saturated and unsaturated fatty acids results from their chemical structure – the number of double bonds in the carbon chain. Saturated fatty acids at room temperature are usually solid and are usually found in animal foods: meat, cold cuts, butter and lard. Saturated fatty acids include palmitic acid, stearic acid, myristic acid, and lauric acid.
