Satsivi is understood to mean both a special chicken sauce and a poultry dish itself with nut gravy. Experienced chefs believe that according to the famous Georgian recipe, you can cook not only chicken, but also turkey, goose, duck, and even fish and meat. In Russian cuisine, not only the classic recipe is very popular, but also various simplified variations of satsivi.
Classic Chicken Nut Sauce Recipe
Boil the chicken breasts, adding water to taste. Drain the finished broth, and cut the meat into medium-sized portions. Then prepare all the required satsivi sauce ingredients. For 2 chicken fillets you will need:
– chicken broth (1 cup); – onion (1 head); – walnut kernels (0,5 cups); – chicken egg yolk (1 pc.); – garlic (3 cloves); – sunflower or olive oil ( 2 tablespoons); – wine vinegar (1 tablespoon); – cinnamon (0,5 teaspoon); – table salt and black pepper to taste; – 1 teaspoon each of spices: hops-suneli, red pepper, cilantro powder …
According to the traditions of Georgian cuisine, the hostesses finely grind the ingredients of the sauce by hand in a mortar. However, you can use an electric mill for quick cooking.
Combine chopped nuts, garlic, cilantro, cinnamon, red pepper. Fry finely chopped onion in a deep cast-iron saucepan in vegetable oil, add chicken stock and nut-spice mixture. Bring the sauce to a boil and simmer with constant stirring for a couple of minutes. After that, wipe the resulting mass through a fine sieve and place it back in a saucepan.
Add warmed wine vinegar and suneli hops to the sauce. Mash the yolk, dilute with a small amount of cold broth and carefully, stirring, pour the yellow mass into the nut gravy. When the finished sauce boils, immediately remove it from the heat and pour it over the chicken. Place the container with meat and gravy on the stove, bring to a boil over very low heat, remembering to stir everything constantly. Let the chicken sit for 3-4 hours. It is recommended to serve the dish chilled.
Satsivi nut sauce with sour cream
The sour cream-nut sauce recipe is, in fact, a simplified version of a popular Georgian dish. Meanwhile, its taste is also original and full-bodied. To make gravy for meat, you will need the following products:
– sour cream with a fat content of at least 20% (800 g); – walnuts (300 g); – dried cilantro (100 g); – parsley (300 g); – garlic (4 cloves); – table salt and black pepper taste.
Use freshly ground pepper for the sour creamy peanut sauce! Unlike a stale store product in a sachet, homemade spice is incredibly aromatic. It will significantly enhance the flavoring bouquet of the dish.
Grind the kernels, peeled garlic cloves and parsley in a blender. Pour in sour cream, add cilantro, salt and pepper everything to taste. Hold the thickening sauce in the refrigerator compartment and use on chicken, turkey and other poultry dishes.
