Method of preparation

‘When preparing sambuca from dried apricots, citric acid is not used. Pits are removed from apricots, poured over with hot water, boiled until the fruits soften, and rubbed. Dried apricots are pre-soaked, then boiled and wiped. Sugar, egg white, citric acid are added to the puree. The rest is cooked and dispensed as described in rec. No. 609. When you leave, sambuc is poured with apricot sauce (recipe No. 577) – 20 g per serving.
