Baked almonds are a simple natural snack for any kind of beer, an excellent replacement for store-bought peanuts and snacks. The whole process of preparing almonds for beer will take no more than 30 minutes. The taste is hard to compare with something else, you have to try it.
The larger the almonds, the better. To reduce the tannic bitterness, the nuts can be preliminarily doused with boiling water and the brown skin removed from them. The shelled almonds go well with light beer with a slight bitterness or fruity notes on the palate.

Ingredients:
- almonds – 250 g;
- salt – 1 teaspoon (without a slide);
- sweet ground paprika – 2 teaspoons (without a slide);
- sugar (preferably brown) – 2 teaspoons (without a slide);
- chicken egg – 1 piece (only protein is used);
- ground black pepper – to taste (optimally about 1 g).
Salt needs medium or fine grinding – very coarse leaves grains of sand that are unpleasant to bite through with nuts. Paprika is not necessary, but it goes well with nuts. The sugar balances out the excess bitterness of the almonds, adding a subtle caramel flavor. Chicken egg protein is required to keep the spices and salt on the nuts. Ground pepper adds spiciness and is recommended for dark beers.
Technology of preparation
1. Separate the protein from the yolk. Place pure protein in a deep bowl for mixing spices. Whisk lightly with a whisk or fork.
2. Add salt, sugar, paprika and ground pepper to the protein. Mix until smooth.
3. In the resulting “sauce” place the almonds washed in running water. Stir until nuts are coated on all sides. Leave the almonds to soak for 3-5 minutes.
4. Line a baking sheet with parchment. Lay the nuts on a baking sheet in a single layer so that they do not touch each other.
Attention! Almonds quickly burn and dry to the bottom of the baking sheet, so it is very advisable to cover the parchment.
5. Put the nuts to bake for 15-25 minutes in the oven, preheated to 100-140 ° C. In fact, it will not be baking, but drying. Stir every 5-8 minutes. Almonds are ready for beer when the nuts are browned and a characteristic almond smell has appeared.
6. Remove the finished almonds from the oven, cool to room temperature and serve as a beer snack.
