Salads on the festive table in the year of the Blue goat

The approaching year of the Goat (Sheep) promises us a peaceful and creative existence, which means that we can please the mistress of the year – the charming Sheep (Goat) with an abundance of crispy greens and light salads on the New Year’s table. Rarely does New Year’s Eve do without Olivier and herring under a fur coat, but new salads will also decorate the table, and who knows, maybe they will become branded in your home.

 

New Year’s seafood salad

Ingredients:

 
  • Shrimps – 200 gr.
  • Squids – 3 pcs.
  • Beans – 200 gr.
  • Canned corn – 1 can
  • Sweet bell pepper – 2 pcs.
  • Mayonnaise – 100 gr.
  • Greens, green onions – for decoration.

Boil squid, shrimp and beans until tender, cool. Peel the shrimp, discard the beans in a colander, peel the squid and cut into rings. Mix the cooled ingredients with corn and chopped peppers (take half each of different colors), season with mayonnaise. Put the salad on a dish, make decorations from the remaining halves of pepper and herbs.

Caesar Salad with Shrimps

Ingredients:

  • Shrimps – 400 gr.
  • Iceberg lettuce – 1/2 pc.
  • Parmesan cheese – 100 gr.
  • Wheat bread – 4 slices
  • Olive oil – 5-7 tbsp. l.
  • Lemon juice – 5 tbsp. l.
  • Garlic – 2 teeth
  • Wine vinegar – 2 tbsp. l.
  • Dijon mustard – 1 tsp
  • Salt – to taste.

Prepare salad dressing – chop 1 garlic clove, add salt, half olive oil, lemon juice, mustard and vinegar to it. Mix vigorously with a fork, whisking slightly. Cut the bread into pieces or break it, sprinkle with oil and bake in the oven until golden brown. Peel large shrimps, fry in a little olive oil, add chopped garlic after three minutes. Tear the iceberg leaves into large pieces, put on a dish. Lay the cooled shrimp and croutons on top, pour over the sauce. Grate Parmesan with a special grater (if not, you can try using a knife to peel vegetables) and sprinkle on the salad.

Salad Festive Wreath

 

Ingredients:

  • Beets – 3 pcs.
  • Dry beans – 1 tbsp.
  • Garlic – 4 teeth
  • Walnuts – 150 gr.
  • Natural yogurt – 200 gr.
  • Dill – 100 gr.
  • Salt, ground black pepper – to taste.

A light, healthy and very elegant salad will appeal not only to vegetarians. Grate the boiled beets on a coarse grater, mix with chopped garlic and nuts (set aside a tablespoon of nuts), add salt and pepper. Boil the beans until tender, chop with a blender and salt. Add half the dill to the yogurt, mix and add a little salt. Put a glass in the middle of the dish, half the beans, yoghurt dressing and beets around it in a circle, then repeat the layers. Leave some beets and beans for garnish. Carefully remove the glass, decorate the salad with dill and small balls of beans and beets, rolled in nuts.

Vitamin salad

 

Ingredients:

  • Carrots – 2 pieces.
  • Apple – 1 pcs.
  • Celery root – 100 gr.
  • Pear – 1 pcs.
  • Cranberries – a handful
  • Lingonberry jam – 2 tbsp l.
  • Sour cream – 100 gr.

For those who are fasting, there are many options for meatless and seafood-free salads. A fun and crunchy vitamin salad with a spicy note of celery is a great alternative to Olivier.

Grate vegetables and fruits on a coarse grater (or grater for Korean carrots), mix and season with half the sour cream. Place in a slide, pour over the remaining sour cream and garnish with lingonberry jam and cranberries.

 

Winter salad

Ingredients:

  • Chicken breast – 1 pc.
  • Egg – 5 pcs.
  • Fresh champignons – 300 gr.
  • Cucumbers – 3 pcs.
  • Apple – 2 pcs.
  • Lettuce leaves – 100 gr.
  • Mayonnaise – 150 gr.
  • Sunflower oil – 2 tbsp. l.
  • Salt, ground black pepper – to taste.

Boil chicken and eggs, cool. Separate the whites from the yolks, grate the whites, chop the yolks. Cut the mushrooms into thin slices, fry in oil for 5-7 minutes, season with salt. Peel the cucumbers, removing a thick layer of the skin – leave for decoration, cut the rest into strips. Also chop the chicken and apples, mix with egg yolks, cucumbers, add mushrooms, pepper and mayonnaise. Put salad on lettuce leaves, sprinkle with proteins and put cucumber Christmas trees on top. Decorate with berries or herbs if desired.

 

Classic shrimp and avocado salad

Ingredients:

  • Avocado – 2 pc.
  • Royal shrimps – 20 pcs.
  • Iceberg lettuce – 1/2 pc.
  • Lime – 1 pcs.
  • Mayonnaise – 100 gr.
  • Red caviar, greens – for decoration.

A classic light and elegant cocktail salad is always a success, especially when served in portioned glasses. Boil the shrimp in salted water, peel and chop coarsely. Remove the seeds from the avocado, peel the fruits and cut into slices, sprinkle with juice from half of the lime. Place a leaf of Iceberg lettuce, avocado and shrimp at the bottom of the glasses, on top of a tablespoon of mayonnaise and a little red caviar. The decoration will be a slice of lime and greens. Each person mixes the salad, or dips the pieces into mayonnaise.

 

Cheese salad with nuts

Ingredients:

  • Dutch cheese – 250 gr.
  • Egg – 3 pcs.
  • Walnuts – 150 gr.
  • Garlic – 2 teeth
  • Mayonnaise – 100 gr.
  • Greens – for serving.

Dry the nuts in the oven or in a dry frying pan, chop. Grate boiled eggs and cheese on a coarse grater (you can for Korean carrots), chop the garlic. Combine all ingredients, season with mayonnaise and mix thoroughly. Put in a transparent salad bowl and garnish with herbs.
