Royal salad: video recipe
The “Royal” salad owes its “majestic” name, as well as its multifaceted unusual taste to a successful and very healthy combination of seafood, fresh vegetables and herbs.
Necessary ingredients:
– 100 grams of squid; – 100 grams of tiger prawns; – 120 grams of lettuce; – 1 fresh cucumber; – 1 potato; – 400 grams of white cabbage; – 6-8 cherry tomatoes; – 6 quail eggs; – 150 grams of Pesto sauce “; – 2 tablespoons of olive oil: – salt; – spices to taste; – fresh herbs; – lime; – olives.
Boil shrimp and squid in salted water.
To prevent seafood from being overcooked and becoming “rubbery”, do not cook them for longer than 3-4 minutes
Place the squid in the Pesto sauce (from the Italian pesto – “grind”). You can use store-bought sauce, or you can make it yourself. For this you need to take:
– 3 bunches of basil (only leaves are used); – 2-3 cloves of garlic; – a handful of roasted and peeled pine nuts; – Parmesan cheese (to taste); – olive oil.
Crush basil leaves, pine nuts and garlic in a mortar or blender. Add grated cheese and olive oil, mix thoroughly.
It is believed that real Pesto sauce should be prepared exclusively in a marble mortar using a pestle.
Boil the potatoes, peel and cut into cubes. Peel the cucumber, cut into thin strips and mix with potatoes. Chop white cabbage finely and add to cucumbers and potatoes. Then combine vegetables and squid, season to taste, pour over with vegetable oil and stir.
How to make a cheese bowl
It will be very beautiful if this salad is served in an edible vase. It is not difficult to prepare such a vase on your own: you only need 50 grams of Parmesan cheese for it. Grate the cheese and, evenly distributing it over the Teflon surface, bake in the oven preheated to 180 ° C. Gently place the hot cheese pancake on a deep soup plate and chill. Put the salad into the finished vase and give it a beautiful shape.
After laying out the salad, add the peeled shrimp to it. Cut the cherry tomatoes into halves and garnish the salad with them on top. Also put halves of boiled quail eggs on top.
Quail eggs contain 5 times more potassium than chicken eggs. Plus, they are rich in iron and B vitamins.
Garnish with lettuce leaves, sprigs of fresh herbs, lime or lemon slices and olives.
