In addition to the well-known red and white wines, there is also rosé, which is prepared using a special technology. Initially, rosé wines belonged to the inexpensive segment of spirits, but over the years their popularity has grown, and more and more often sommeliers highly appreciate these drinks and recommend serving them with gourmet dishes.
By its nature, rosé wine is quite versatile – it has a pronounced, but unobtrusive taste, there is no strong aftertaste, which makes it possible to expand the list of products, accompanied by which this drink reveals all the nuances of taste and aroma. But keep in mind that rosé wine has several classification categories. The most valuable rosé wines from France are labeled with the AOC code, which means that the wine meets the most stringent requirements and is produced using traditional technology. The requirements for table wine are somewhat lower, however, it must also be mature and natural.
Should you prefer a more aged wine? It depends on your taste. Young wines have a more subtle taste, so they are best served with dishes with a delicate taste. On the contrary, aged wines require a bright flavor accompaniment.
The youngest rosé wine is Beaujolais, which is served the same year it was made.
Historically, rosé wines were produced in the south, in particular, in France, Provence was the central region for their production. Therefore, rosé wine goes well with the Mediterranean cuisine of this region. Provencal and Angevin rose wines can be served with fish and meat appetizers, lamb dishes, vegetable ragout with Provencal herbs. Rosé wine from Corsica best complements poultry dishes, grilled meat, and goes well with goat cheese.
In the above regions, dry and semi-dry rosé wine is most often prepared. If you bought a semi-sweet one, serve it with baked fish, sausages or white stew.
A separate category should be allocated to pink champagne. This sparkling wine is highly prized. It is most often drunk at Christmas accompanied by toast with foie gras and fig jam. Also, this wine goes well with smoked salmon and poultry dishes.

To drink good wine with pleasure, you need to be able to serve it correctly. Rosé wine should be chilled to 8-10 degrees, while the temperature of the wine does not depend on whether the dish is served hot or cold. Sparkling rosé wine should be served in an ice bucket and protected from shaking, otherwise, when the bottle is opened, a significant part of the wine, foaming, may simply spill out.
